These Brownie Ice Cream Sandwiches are a must make dessert! Forget buying the ones at the grocery store, these are like 10 times better. Richer, more chocolatey and the ice cream is perfection!
You know how much I love brownies, they’re like my second favorite dessert, next to cake. And it’s a pretty close tie between brownies and cheesecake.
I just love brownies, you can customize them to make your own and there’s so many flavors and ways to make them. Hence these fun Ice Cream Sandwiches!
I took my favorite fudge brownie recipe and tweaked it a bit to make it more like a cakey brownie. It is easier to eat the sandwiches this way since the brownie will be frozen.
I love being able to make these desserts instead of buying them. The kids love ice cream and having these homemade Brownie Ice Cream Sandwiches on hand means one less trip to the store and I know they’ll always get devoured.
Ice cream desserts are one of my kids favorite things ever, all year round, doesn’t matter the weather. So these are made more often than not, and I have no qualms about it!

INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM):
Salted butter
Semi-sweet chocolate chips
Granulated sugar
Eggs
Vanilla extract
All-purpose flour
Unsweetened cocoa powder
Baking powder
Fine sea salt
Softened vanilla ice cream
HOW TO MAKE BROWNIE ICE CREAM SANDWICHES, STEP BY STEP:
- Preheat the oven to 350°F and line two 9×9 baking dishes with parchment paper. Spray them with cooking spray, and set them aside.
- Add the butter and chocolate chips to a medium-sized microwave-safe bowl. Microwave the butter and chocolate in 15-second intervals, stirring in between intervals until it’s smooth.
- Whisk in the sugar to the butter chocolate mixture until combined.
- Then, whisk in the eggs one at a time, mixing in the first one fully before adding the next. Stir in the vanilla extract next.
- Stir together the flour, cocoa powder, baking powder, and salt in a separate large bowl.
- Add the wet mixture to the dry ingredients and stir them both together until it’s all fully combined with no dry patches.
- Add half of the batter to each prepared baking dish and bake them for 16-18 minutes, or until a toothpick inserted into the center comes out mostly clean. It is better to slightly undertake the brownies rather than overbake them, so if there are a couple of crumbs on the toothpick that is perfect.
- Let the brownies cool completely in the pans before moving on.
- Make sure the ice cream is softened but not completely melted. Carefully smooth the ice cream on top of one of the brownies while still in the pan.
- Take the second brownie out and remove the parchment paper. Place it on top of the ice cream you just smoothed out and gently press it down.
- Wrap the baking dish with foil and place in the freezer until frozen solid, about 6 hours.
- When ready to serve, remove the foil and lift it out using the parchment paper to help. If they’re sticking to the pan, run a butter knife along the sides of the pan and the parchment paper to help release it.
- Take off the paper, and cut into 9 even bars, serve sandwiches immediately or pop them back into the freezer until you are ready to serve.
CAN I USE OTHER FLAVORED ICE CREAM?
You can surely swap the vanilla ice cream out. Feel free to use any flavor of ice cream you like, we went with vanilla for a classic ice cream sandwich but any flavor of ice cream that goes with chocolate will work perfectly.
Some of my other favorites that we have used in the past include: strawberry, cookie dough, cookies and cream, butter pecan, mint, etc.
CAN I FANCY THESE UP?
Absolutely, after cutting them into sandwiches, place them back into the freezer to make sure they have frozen solid again.
Then, you can dip an edge in melted chocolate or drizzle melted chocolate on top. You can then add sprinkles, chocolate chips, cut-up candy bars, etc to make it your own!
Give the treats to everyone and they can decorate and customize their own sandwiches.
CAN I ADD ANYTHING TO THE BATTER?
Of course! You can also add extra mix-ins directly to the brownie batter. I suggest trying chopped walnuts or pecans, chocolate chips of any variety, or crushed cookies to really take them up a notch!
HOW TO STORE:
These ice cream sandwiches need to be stored in the freezer at all times or they will melt.
They should keep for up to 3 months in an airtight, freezer safe container.
TIPS AND TRICKS:
- It’s best if your brownies are slightly underbaked so they can hold up better once frozen.
- You have to keep these in the freezer, I like to cut them into bars, wrap them in plastic wrap and then store them so you can grab a little treat whenever you like.
- You can scoop the ice cream out of the container onto the first layer of brownies using an ice cream scoop. Then use a rubber spatula to help smooth it out.
- These can be difficult to cut. Use some extra elbow grease and muscle and a nice sharp knife to cut them.
- Don’t be afraid to extra mix-ins or fancy these up some more using any of my suggestions above.
- You can swap out the ice cream flavor if desired. This is a basic recipe and is super simple to build off of. See some other flavor ideas above.
