Chunks of strawberry and bananas make up this super tasty Strawberry Banana Ice Cream Topping!
You guys….this stuff is legit. I literally want to eat this out of the jar with the spoon. What really sucks is that my pictures don’t have bananas included in them! Ugh, I’m kicking myself in the booty right now, but that’s because I ran out of bananas after I added it to this recipe! But you know what, the flavor of this delicious stuff is worth it.
So I don’t know if you know this, but I’m not a real big ice cream person. I know you’re thinking I’m crazy right about now! I mean I’ll have the occasional DQ or homemade ice cream, but I’ve just never been the one to sit around and eat it. My husband on the other hand….he will buy tubs of it and eat it out the carton with a spoon.
I know, how did we ever click with each other right? We have such different tastes. I could eat dessert for breakfast, lunch and dinner. He turns his nose up at the site of it. He’s a go with the flow type of guy, I’m a type A personality….sorta, I like to say I’m laid back but secretly we all know I’m not.
But I will admit this…if I put this on ice cream, I will lick the bowl clean! It is that good. Obviously I might be bias because I made it…but I’m not lying. Besides, strawberry and banana just go together so well you have to know that it was meant to be.
This recipe is pretty much fool-proof. Super easy – just throw everything into a pan, boil, simmer and wait for it to thicken. See, fool-proof! Oh and let cool, that’s the hardest part. Technically you don’t have to let it cool, but then you’d have quickly melted ice cream.
What is really awesome about this is add some pineapple chunks and chocolate syrup and you’ve got yourselves a mock Banana Split! Or at least the flavors anyways, and who doesn’t love themselves a good old banana split!
Although this Strawberry Banana Ice Cream Topping is titles towards ice cream, this stuff goes great over waffles, cream puffs, pancakes, pound cake, shortcake. Must I go on? Lol. You get the gist.

Strawberry Banana Ice Cream Topping
Ingredients
- 1 lb strawberries stems taken off and diced
- 1 banana chopped
- Heaping 1/3 cup sugar
- 1/3 cup + 3 Tbs water
- 1 Tbs lemon juice
- 2 tsp cornstarch
Instructions
- In pan add your strawberries, banana, sugar, 1/3 cup + 2 Tbs water and lemon juice. Bring to boil and reduce heat and let simmer for about 20 minutes.
- Once reduced mix your cornstarch and 1 Tbs water together and stir into your syrup mixture and let simmer for few minutes more until mixture coats the back of a spoon.
- Spoon into 2 8 oz jars and refrigerate until cooled.
- Serve over your favorite ice cream.
