Do you love sheet pan dinners? I know that my family adores them! We have been making this Chicken Sausage & Vegetable Sheet Pan Dinner for some time now and we cannot get enough, it is just THAT GOOD.

Also, its quick, easy, healthy and filling. You can eat it as is, toss it over some cooked noodles or rice and you have yourself a variety of different options. But we love just eating it as is most of the time!

Chicken sausage is one of our favorite meats, we like to use the apple flavor in this recipe just because the sweet with the vegetable flavor is really off the hook. I know there will be some noses turned up at that fact, but trust me, the flavor is glorious.

Sheet Pan Dinner Recipes

If you’re not a big fan of the apple flavor you can easily switch it out to Italian or 3 cheese variety if you so choose. It is really simple. 

So here is the best part, you can really switch it up to whatever vegetables you so choose. In this Chicken Sausage & Vegetable version we used zucchini, red, yellow and orange peppers, green beans, broccoli and red potatoes.

The color variety and texture variety really sets it off and gives you so much different options nutrient and flavor wise that these are some of our favorite veggies to use, so many choices.

One Pan Dinners

So what we do is slice up our vegetables and sausage into bite sized pieces, but not too small, we still like larger bites. We line a large rimmed baking pan with tin foil and give it a little spray of non-stick cooking spray.

We then spread the ingredients all over the pay, give it a little drizzle of olive oil and sprinkle some seasonings over the top and give it a nice toss and bake it in the oven for about 30-40 minutes.

For this particular recipe we used a mixture or oregano, parsley, onion powder, paprika, salt and pepper. We also sprinkled it will some fresh chopped parsley at the end to give it some fresh color and flavor.

One Sheet Pan Dinners

This Chicken Sausage & Vegetable Sheet Pan Dinner is a quick and easy weeknight solution, our kids really gobbled it up. I know that kids can be really picky but I was so lucky that my kids absolutely loved this the first time we made it that we kept making it over and over again.

It’s a staple in our house and can easily be changed up to suit your flavor or whatever vegetables or meats that you have in your refrigerator.

We also like to use andouille sausage or smoked sausage to change up our meats. Chicken and steak would also be a fun and flavorful option but cooking times would probably have to be adjusted accordingly to ensure that the meat cooks properly.

  • 1 large zucchini sliced and cut in half
  • 1 small head broccoli
  • 1 red pepper diced
  • 1 yellow pepper diced
  • 1 orange pepper diced
  • 3/4 lb green beans trimmed and cut in half if needed
  • 2 medium red potatoes cut into 1" pieces
  • 3 chicken sausage links sliced
  • 1/3 cup olive oil
  • 2 tsp paprika
  • 1 Tbs parsley
  • 1 Tbs oregano
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • Fresh chopped parsley optional
  1. Preheat oven to 375.
  2. Line a large rimmed baking sheet with tin foil and spray with non-stick cooking spray.
  3. Add your vegetables to baking sheet and drizzle with olive oil and stir around to coat.
  4. Sprinkle with seasonings and stir around again to coat.
  5. Place in oven and bake for 20 minutes, then stir to ensure even cooking.
  6. Bake for another 10-20 minutes checking for doneness after 10 minutes.
  7. Remove from oven and sprinkle with fresh chopped parsley if desired.
