Sweet and tangy, these Horseradish Pickles are quick and easy, using store-bought pickles with amazing ingredients added!
One thing I grew up eating are these Horseradish Pickles, this was my mom’s signature recipe and made them all the time since my dad loved them.
Once my husband tried these for the first time at my parents house, he couldn’t get enough and the rest is history and we’ve been making them ever since.
The best part about these is that you don’t have to do a long process to make pickles from cucumbers, you use your favorite store-bought pickles and go from there.
Also it takes minimal and easy to find ingredients to throw this recipe together.
Now I do say that these are 2 ways, we made them here with both slices and spears, you can do either. We love both.
This is a great snack to bring to picnics, serve on sandwiches, have as a side dish at dinner and more.

WHY THIS RECIPE WORKS:
- Store-bought pickles make these super easy.
- You can use spears, slices or even baby dills.
- There is a great balance between the flavors of sweetness and a little kick.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Kosher Dill pickle spears or slices
Prepared horseradish
Granulated sugar
White distilled vinegar
Water
HOW TO MAKE HORSERADISH PICKLES, STEP BY STEP:
- Drain your pickles and return pickles to jar and pour horseradish over top of pickles.
- Add sugar, vinegar, and water to a small saucepan and bring to a boil.
- Slowly pour sugar mixture over top of horseradish and pickles, until jar is filled.
- Allow to cool enough to handle, then close with lid and place in refrigerator for at least 24 hours before enjoying.
WHAT PICKLES SHOULD I USE?
You are going to want to use dill pickles for this recipe, we have not tried them with any other pickles, but you can use slices, spears or whole baby dills.
If you are looking for specific brands, we have tested with a variety and here are some that we love:

- Claussen
- Milwaulkee
Use your favorite brand, there is no right or wrong when it comes to these – only that they are dill.
HOW LONG DO THESE HAVE TO SIT BEFORE EATING?
We highly recommend that you are letting them sit in the refrigerator for 24 hours before consuming.
This really gives the Horseradish Pickles time to marry in all the flavors and take on the sweetness from the sugar and the kick from the horseradish.
DO I USE THE PICKLE JUICE?
No, you will discard the pickle juice for this recipe, but there are so many recipes that you can use that discarded pickle juice for, some of our favorites include:
I CAN’T FIND 32-OUNCE JARS OF PICKLES, WHAT CAN I DO?
If you do not find 32-ounce jars of pickles at the store, you can grab smaller sizes that add up to 32 ounces and then place the pickles in a quart-size canning jar.
HOW TO STORE:
These can be stored in the refrigerator in the jar with the lid where they will keep for up to 3 weeks.
We do NOT recommend freezing this recipe.
TIPS AND TRICKS:
- Use your favorite horseradish brand, you can try other flavors to change it up.
- Make sure that you are using dill pickles.
- You can use pickle slices, spears or whole baby dills.
- You will discard your pickle juice but it can be used in other recipes, see above for ideas.
