Quick, easy and delicious this Air Fryer Coconut Shrimp is a wonderful appetizer or dinner meal with a spicy and tasty Sriracha Mayo Dipping Sauce!
If you are a fan of shrimp, then you are really going to like this delicious Air Fryer Coconut Shrimp! It is such an easy recipe and perfectly fries up in the air fryer.
I love using the air fryer when I get the chance to and shrimp is one of those recipes that works very well in it. This Coconut Shrimp has to be one of our favorite recipes.
We love this recipe because it is not overpoweringly sweet as we don’t use sweetened coconut for this, it is more of a savory coconut shrimp with delicious spices and a dipping sauce.
If you want to make it more sweet, you can use sweetened coconut in this and leave out the garlic powder in this recipe! We make it both ways but this is the way we make it the most.
Shrimp is one of those meals that we absolutely love and cant get enough of around here. Everyone loves shrimp so whenever this recipe is requested I always make it!

WHY THIS RECIPE WORKS:
- With easy to find ingredients this is quick to fry up.
- You can switch it to be a sweeter version if you’d like.
- The sauce works perfectly with the flavors of the shrimp.
INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM):
Extra large shrimp
Panko breadcrumbs
Unsweetened coconut
All-purpose flour
Eggs
Garlic powder
Salt
Pepper
Avocado oil spray
Mayonnaise
Sriracha sauce
Honey
Rice vinegar
Lime juice
Green onion
Sesame seeds, optional
Cilantro, optional
HOW TO MAKE AIR FRYER COCONUT SHRIMP, STEP BY STEP:
- Pat dry all shrimp to ensure the breading sticks and the end results are crispy. Set aside.
- In a medium bowl, combine panko breadcrumbs, shredded coconut, all-purpose flour, garlic powder, salt, and black pepper. Mix well
- In a small bowl, whisk the 2 eggs until the white is thoroughly incorporated with the yolk
- Holding the shrimp by the tail, dip it into the egg mixture, and place it in the bowl with the breading mixture. Working with your hand, ensure all sides of shrimp are well-coated with the breading. Set breaded shrimp aside on a sheet pan lined with parchment paper. Repeat steps for the remaining shrimps
- Spray the base and sides of your air-fryer basket with avocado oil spray.
- Place as many shrimps in the bottom basket as you can without crowding them and spray the top of shrimps with avocado oil spray
- Set the heat to 400ยฐC and timer to 5 minutes. Check the shrimps and once the top surface is golden and crispy, flip them over so the other side can get crispy as well.
- Fry for another 5 minutes. Once top and bottom side are golden brown and crispy, take the shrimps out of the fryer. Add 1-2 minutes of additional time if the shrimp are still pale and not yet crispy.
- Repeat the process for the remainder of the shrimp.
- Garnish fried shrimp with chopped cilantro, if desired.
FOR DIPPING SAUCE:
- Combine mayonnaise, Sriracha sauce, honey, vinegar, salt and pepper, and lime juice. Mix until thoroughly incorporated
- Sprinkle chopped green onions, chopped cilantro (optional), and sesame seeds.
See how easy this Coconut Shrimp is? This is why we love it so so much. My kids can eat these all day every day and not even get sick of them!
They also are in love with the air fryer so anything that we make in it is something that they love anyways. They use it to cook and and all things that they can.
WHAT SIZE SHRIMP SHOULD I USE?
We use extra large shrimp for this recipe as we want larger portions, you can use smaller for this but the larger the better as the coating will have more to hold on to.
CAN I MAKE THIS SWEET?
You absolutely can! You can swap out the unsweetened coconut with sweetened and then leave out the garlic powder. We do this often when we want a more sweet version of Coconut Shrimp.
We really don’t have a preference to either one as we like both the sweet and the more savory as they are both absolutely delicious.
HOW TO STORE:
This can be stored in an airtight container or a ziptop bag in the refrigerator for up to 3 days. To reheat place in the air fryer for about 2-3 minutes at 400 degrees too heat through.
These can also be frozen, fry as instructed and then let cool and place in a freezer bag. This can be stored in the freezer for up to 2 months.
To defrost remove to refrigerator overnight. To reheat follow the instructions above.
TIPS AND TRICKS:
- The larger the shrimp the better.
- It is important to ensure shrimp are thoroughly thawed, drained off excess liquid, and patted dry prior to breading. This is to ensure the breading sticks to the shrimp, and that the end results are crispy, golden brown fried shrimp.
- Do not crowd the shrimp in the basket, make sure there is plenty of space for hot air to circulate.
- Cooking time depends on your air fryer. If in doubt, use less cooking time and keep checking the shrimp and adding more cooking time until they are crispy, flipping them over so that the other side can get crispy as well.

Ingredients
Coconut Shrimp:
- 36 extra large shrimp peeled and deveined. Ensure tails are intact. Thaw completely ahead of time if using frozen shrimp, drain all excess liquid
- 1/3 cup panko breadcrumbs
- 1/3 cup shredded unsweetened coconut
- 2 large eggs room temperature
- 1 Tbs garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- Avocado oil spray or other non-flavored cooking oil spray for air frying
Honey Sriracha Mayo Dipping Sauce:
- 3/4 cup of mayonnaise
- 1 Tbs Sriracha sauce
- 2 Tbs honey
- 1 Tbs rice vinegar
- Juice of 1 lime
- Salt & pepper to taste
- 1 green onion chopped, reserved to sprinkle on top
For garnish (optional):
- Sesame seeds
- Chopped fresh cilantro
