With only 6 ingredients these delicious Scotcheroos are the perfect dessert to take to any gathering. They disappear fast, are easy to make and absolutely addicting.
Sweeeeets, are my favorite thing in the world. I would love to say that I can live off of desserts alone, but I mean how realistic and healthy is that?
That doesn’t mean that I don’t indulge from time to time. Especially when it comes to these Scotcheroos. They are one of my favorite desserts ever.
Bars have always been a common go to around here, some of our favorite that we make a lot include Homemade Skor Bars, Almond Cheesecake Bars and these Reese’s Peanut Butter Bars!
WHY THIS RECIPE WORKS:
- With only 6 ingredients that are easily to find, they are super easy to whip up!
- They feed a crowd, you can easily double or triple this recipe with no problems.
- You can speed up the time by sticking these bars in the refrigerator to set up faster.
These Scotcheroos are one of those recipes that I grew up on. My mom always made them, they were the go-to bar when it came to pretty much anything and everything.
HOW TO MAKE SCOTCHEROOS, STEP BY STEP:
- In large pan or dutch oven add your corn syrup and sugar.
- Stir your corn syrup and stir over medium heat until it just comes to a boil and sugar dissolves.
- Remove from heat and stir in your peanut butter until combined.
- Once combined add in your Rice Krispies and stir until everything is coated.
- Spread into a greased 9″x13″ baking dish, set aside.
- In double boiler or microwave melt together your butterscotch chips and chocolate chips and spread over bars and set aside to harden.
This Scotcheroo recipe is one of the most simple bar recipes you will ever encounter, it is like a delicious Rice Krispy treat but amped up!

WHY ARE MY SCOTCHEROOS HARD?
This happens when you boil your sugar and cornstarch too long, this will cause it to set up harder when it sets and everything is pressed into the pan.
They can also be hard if you have them in the refrigerator too long, you can resolve this by letting them sit out to come to room temperature and they will soften up.
HOW LONG WILL THIS RECIPE LAST?
You can cover them and let them sit at room temperature for about 3-4 days and they will stay fresh.
To freeze you can cut bars individually and place in a ziptop bag or Tupperware container separated by wax or parchment paper and they should last about 3 months.

TIPS AND TRICKS:
- We really prefer a double boiler when it comes to melting chocolate, it helps it from seizing and you don’t have to stop and stir in intervals.
- Do not over boil your sugar and corn syrup mixture, as notated above this can cause everything to get hard and not chewy like they should be.
- If you are not a fan of butterscotch you can absolutely just use all regular chocolate chips for this recipe.
- Another well known type of bars like these are known as Special K bars, you can use crushed up Special K cereal or cornflakes in the same amount for these bars.
- We have not tired any other nut butters in this recipe, but I suppose you could use almond butter, but the flavor will be a little different.
