Ooey gooey and delicious these Peanut Butter Cup Cheesecake Bars mashup cookies with cheesecake with a favorite candy baked right in!
So this weekend was like Summer here! Literally, my mood instantly changed, like I never realized how truly blue winter can make a person until you get that anticipated day of warmth where you’re able to sit outside all day and just enjoy every last second of it! I mean I could have paused time if I knew that it was only going to be short lived. Boo.
So the next day was rainy and gloomy and I decided I needed a little comfort food so these sinful Peanut Butter Cup Cheesecake Bars were born and I absolutely love them. I love pretty much any dessert that can include one of my all time favorite candy bars in them anyways so this stuff is like eating heaven.
Have you ever noticed that I kinda say that about all the desserts I make, the it is absolutely the best? Well you guys, I wouldn’t lie to you. I’ve made plenty of desserts that just didn’t make the cut, frankly because they just weren’t on that level of deliciousness that the ones that I do share with you are, you understand?
This blog would probably be double in size if I actually shared with you the mediocre recipes that I’ve made and just kinda sorta liked. I will admit that there are recipes on here that I don’t particularly like, not because they aren’t good….because people love them, but they just aren’t my cup of tea ya know?
Like can you believe that I don’t like fish?!?! True story, I pretty much hate the stuff. I’ll eat some fish sticks and a can of tuna here and there but like cook up some walleye or salmon and I’m turning my nose up at it. And that pretty much goes for all sea food!
BUT there are exceptions to every rule like I’m addicted to these Fish Tacos, Shrimp Po Boy Sliders and this Mock Crab Leg Salad. I guess it has to be the way it is prepared for me to actually give it a chance, and I’ve noticed that if fish comes breaded I’m more apt to eat it than if it wasn’t so theres that.
Anyways, enough about fish! Let’s talk about these delicious Peanut Butter Cup Cheesecake Bars!! There is nothing that I don’t like about these. Peanut butter cookies, check. Cheesecake, check. Peanut butter cups, check. So…I mean what else do you really need in a dessert? These bars kinda have it all, it’s like 3 desserts in one and that is legit awesome.
So these bars can be eaten 2 different ways. Ooey gooey and fresh right out the oven or chilled and solid bar like. Now I don’t care either way like I said these puppies are heaven and are gold no matter what way they go into my mouth, but I know certain people have preference as if they would use a fork or their hands, I’m kinda a hands girl all the way.
So if you’re looking for that next big family hit, these Peanut Butter Cup Cheesecake Bars are the winning ticket my friends! They are simple to make and even more simple to consume, trust me, you really won’t want to stop at just one!
Peanut Butter Cup Cheesecake Bars
Ingredients
- 1 pkg cream cheese 8 oz, softened
- 1 egg
- 1 1/2 tsp vanilla
- 1/3 cup sweetened condensed milk
- 1 cup chopped peanut butter cups about 8
- 1 lb pkg peanut butter cookie dough or homemade
Instructions
- Preheat oven to 350.
- In bowl mix together your cream cheese, egg, vanilla and sweetened condensed milk and beat with mixer until smooth.
- Fold in your chopped peanut butter cups, set aside.
- In a greased 9"x9" pan press half of your cookie dough until it covers bottom.
- Pour your cheesecake mixture over top and then drops small pieces of the remaining cooking dough over the top of that.
- Bake for about 40 minutes or until slightly golden.
- Chill in refrigerator until set or cut and serve warm out of pan!
