A classically simple dessert, these Hello Dolly Bars have multiple layers of deliciousness and are the perfect bar for parties, holidays and more.
If you have never heard of Hello Dolly Bars you are missing out. They also go under the name 7 Layer Bars and Magic Bars, but we have always known them as Hello Dolly Bars.
We have been making these for YEARS! I think out of all of our desserts this is one that has been made the longest. Again a recipe that had been passed down from generation to generation.
I remember growing up on these delicious layered bars and we just can’t get enough of these. They are chewy, gooey and ultra decadent.
One of those recipes that once you make them, they will soon become a recipe that makes it on your baking rotation. At least it does mine.
Consisting of graham cracker crumbs, sweetened condensed milk, chocolate chips, butterscotch chips, coconut and pecans. All of which go together so so well.
Everything melts into one another which gives it a chewy but crunchy taste from the pecans, the perfect texture combination.
Some of my other favorite bars we have on our site include: Brookies, Maple Chocolate Pecan Pie Bars and Scotcheroos.

HOW TO MAKE HELLO DOLLY BARS, STEP BY STEP:
- Preheat the oven to 350 degrees F and line an 8×8-inch baking pan with parchment paper and set aside.
- Add the crumbs, melted butter, and salt to a small bowl and mix until thoroughly combined.
- Add the crumbs to the prepared pan and use the bottom of a flat glass or your hands to press the crumbs down evenly to cover the bottom.
- Pour the sweetened condensed milk evenly over the graham cracker crust.
- Sprinkle half of the chocolate chips, butterscotch chips, and pecans on top of the sweetened condensed milk.
- Sprinkle the coconut over the chips then top with the remaining chips and nuts and gently press down.
- Bake for 25 minutes, the top should be a golden brown and the center will still wiggle. Allow to cool completely on a wire rack before slicing and enjoying.
DO I HAVE TO USE BUTTERSCOTCH CHIPS?
I know that some people are not a huge fan of butterscotch so you can absolutely leave them put, but I would replace them with something.
We have substituted with just more regular chocolate chips and another fun and tasty addition is peanut butter chips.
So you have a couple options when it comes to leaving out the butterscotch chips, just make sure you do replace them so everything binds together.
DO I USE SWEETENED OR UNSWEETENED COCONUT?
This is completely up to you the baker, there are a lot of sweet components in this recipe. I like to add sweetened coconut personally.
But if you want these bars to be a little less sweet you can use unsweetened as well. We add a little extra salt to the crust to offset the sweetness of these bars already.
HOW TO STORE:
These Hello Dolly Bars can be stored at room temperature in an airtight container for up to 3-4 days or they can be refrigerated for up to 1 week.
These can also be frozen, place in a freezer container or bag and they will keep in the freezer for up to 3 months. Let defrost on the countertop before eating.
TIPS AND TRICKS:
- These can easily be doubled and made in a 9×13-inch pan.
- You can use any chocolate chips you like, we like to use semi-sweet.
- If you are not a fan of butterscotch chips you can swap them out with more chocolate chips or even peanut butter chips are great.
- These can be frozen, see my tips above.
- I recommend using a straight edged pan for baking these (nothing with rounded edges) for the best outcome.
- Depending on how sweet you want these you can use sweetened or unsweetened coconut.
