What is summertime without an iconic S’more? That is one thing that I love about summer is that we can have fires and make all the delicious S’mores that we like.
But I don’t just like S’mores themselves, I like baking with S’mores flavors, that is why we can’t get enough of these super easy and delicious S’mores Bars.
Three layers of deliciousness that combines all three flavors of the S’mores themselves. Graham cracker, chocolate and marshmallow. You absolutely cannot go wrong with this dessert recipe.
My kids are a huge fan of S’mores so we always make them, but they beg me to make all the desserts as well, especially these bars. They can’t resist them and neither can I.
The gooey brownie center is really what gets me with these. It adds not only a real base to the recipe but just another delicious way to doctor up a brownie mix.

INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM):
Sugar cookie mix
Graham cracker crumbs
Butter
Brownie mix
Coffee
Vegetable oil
Egg
Mini marshmallows
HOW TO MAKE S’MORES BARS, STEP BY STEP:
- Heat the oven to 375 degrees F.
- In a large bowl, combine the sugar cookie mix and graham cracker crumbs.
- Stir in the melted butter and combine until a soft dough is formed
- Press the dough into an ungreased 9×13 inch pan, set aside.
- In a separate bowl, combine the brownie mix, coffee, vegetable oil, and eggs.
- Pour the brownie batter over the cookie mix and bake for 35-40 minutes or until a toothpick comes out clean.
- Top with marshmallows and broil in the oven for approximately 1-2 minutes, until the marshmallows are toasted.
- Remove from oven and enjoy!
WHAT KIND OF BROWNIES SHOULD I USE?
You can use your favorite brownie mix, we use fudge brownies for this one because they are gooier. You can also use your own homemade brownie recipe if you like.
Another thing you can do to add a little more chocolatey flavor and gooeyness to these is chop up some chocolate or add chocolate chips to your brownie batter.
Talk about delicious chocolate overload, we often chop up actual Hershey bars for this recipe and add them into the batter itself, such a delicious addition.
DO I NEED TO USE COFFEE?
No you do not need to use coffee in this S’mores Bar Recipe. We add the coffee because it actually enhances the chocolate flavor in any baking recipe.
If you want to swap it out you can swap out with water easily. So either way that you want to do it is fine, we just love that extra enhanced chocolate flavor.
If you are worried that you will taste the coffee in the recipe, you won’t and if you do it is really subtle. It really just enhances the flavor of the chocolate in the dessert itself.
CAN I USE LARGE MARSHMALLOWS?
If you want a heaping layer of marshmallow on top then I say yes you can use large marshmallows. I have not personally tried it with large marshmallows.
We always stick to the mini marshmallows as we feel like the balance of flavors are great with them, but if you want to try them with large ones be my guest.
I would say that you will want to broil them a little longer and they will puff up then shrink and I can see that extra gooey layer being delicious, so if you try this let me know how it turned out!
CAN I ADD ANYTHING TO THE BROWNIE BATTER?
If you want to switch up the flavors or enhance flavors you absolutely can, some things that would taste great in the batter include:
- Chocolate chips
- Chopped chocolate
- Peanut butter chips
- White chocolate chips
- Graham cracker chunks
HOW TO STORE:
You can store these S’mores Bars in an airtight container at room temperature where they will keep for up to 5 days.
They can also be frozen, place in a freezer container or bag, preferably separated by parchment paper and they should keep for up to 3 momths.
To defrost, remove to the countertop until thawed. You can eat them at room temperature or warm them up in the microwave for a few seconds.
TIPS AND TRICKS:
- You can use any brownie mix that you like, we use fudge for this recipe. Or you can make your own homemade brownie mix.
- We use mini marshmallows for the topping, but you can try large marshmallows but we have not tested this.
- You can add additions to the brownie batter if you want, see some suggestions above.
- You can substitute the coffee in this recipe for water, the coffee enhances chocolate flavor.
- These can be eaten warm or cold, let them cool slightly before cutting.
- Keep an eye on the marshmallows when broiling, they can burn quickly.
