Rice dishes are some of my favorite sides. They can be super simple like this Easy Spanish Rice. Which is made in one pot and is ready in under 30 minutes.
While this recipe most likely isn’t the most authentic recipe around, it has become one of our most favorite ones ever.
Some of our other favorite Spanish or Mexican inspired recipes include Slow Cooker Barbacoa Beef, Chicken Taquitos and Pico de Gallo.

HOW TO MAKE EASY SPANISH RICE, STEP BY STEP:
With a family of 6, we rely on quick and easy recipes. It is an essential part to our lives. We really can’t do anything that takes a long time, unless on the off chance we find that time.
So easy is always what is has been. Besides, easy recipes are sometimes some of the MOST flavorful and delicious recipes around, trust me.
I pretty much only make easy dishes and desserts on this site, and I can first handedly tell you that that, is a fact!
WHAT GOES WELL WITH THIS RECIPE?
So we love to have Mexican inspired nights at our house, our kids are in love with tacos, taquitos and pretty much anything Mexican or Spanish related.
So a lot of dishes that we regularly serve alongside this Easy Spanish Rice are Machaca, Chicken Quesadillas, Green Chile Chicken Enchiladas and many more!

IS SPANISH RICE A MEXICAN DISH?
Spanish rice is also know as red rice, arroz rojo is considered a Mexican side dish as the Spanish originally introduced this to Mexico. The names can be interchanged to Mexican Rice or Spanish rice, whatever you prefer.
The ingredients are pretty much the same, but everyone depending on where they came from makes the recipe just a little bit different.
There are no wrongs or rights, it’s personal preference on how you want your recipe to turn out but usually they all use the same basic ingredients.
All I know is that since we’ve been making this recipe, we have always fallen in love and can not get enough of it, especially since it is super simple to make.
TIPS AND TRICKS:
- Make sure you use a pot big enough as the rice will expand when it is cooking.
- We like to dress ours up with a little bit of cilantro and lime juice, even a squeeze of lime over the top gives it great flavor.
- This makes a bunch so it is perfect for our family of 6 as a side dish.
- You can use this recipe to stuff things such as burritos, burrito bowls, etc.
- You can use any kind of onion you’d like
- If you don’t have chicken broth you can use water, although chicken broth really adds to the flavor.

Easy Spanish Rice
Ingredients
- 2 Tbs canola oil
- 1 medium onion diced
- 2 cloves garlic minced
- 1 1/4 cup long grain white rice
- 2 Tbsp tomato paste
- 1 tsp chilli powder
- 1 tsp cumin
- 1/2 tsp salt
- 2 1/2 cups Chicken broth
- 1/4 cup cilantro chopped
- 1 lime wedged
Instructions
- In a 10 inch skillet, heat oil on medium heat.
- Add onions and garlic and sautee until onions are soft.
- Add the rice and stir until rice is coated in the oil.
- Stir in tomato paste and spices.
- Add the chicken broth and stir to combine.
- Heat on high until liquid comes to a boil, then reduce to low and cover.
- Cook 20-25 minutes until liquid is absorbed. You can stir half way through to make sure it isn’t
- sticking to the bottom of the pan.
- Remove from heat, stir in cilantro.
- Serve with extra cilantro and lime wedges.
