We love zucchini around here, we always pick some up fresh at the farmers market each year and just bake with it or make it as a side dish.
Unfortunately I do not have the greenest thumb in the world so I gave up on trying to grown my own garden, but love buying fresh from other farmers in the area.

- It is done from start to finish in under 20 minutes.
- You can add other vegetables and seasonings to make it your own.
I’m fortunate enough that my kids love zucchini, so they always gobble this up when we make it, which doesn’t happen with a lot of vegetables but this one is a winner.
This Easy Sautéed Zucchini is one of the most requested summer side dishes that my kids ask for, this and the Banana Zucchini Sheet Cake, they love it sweet and savory!
HOW TO MAKE EAESY SAUTÉED ZUCHINI, STEP BY STEP:
- Add butter (or olive oil) to heavy non-stick pan and heat over medium high heat until melted and foamy.
- Add shallot and garlic to pan and cook 2-3 minutes, until fragrant and soft, stirring occasionally to prevent burning.
- When shallot is slightly browned and fragrant, add zucchini to pan and season well with salt, pepper, and herbs.
- Sauteé until softened and browned, another 6-8 minutes, stirring occasionally to prevent burning.
- Serve immediately.
See how easy this recipe is? I love how quickly zucchini cooks up, and it still has a little crispness in it, the salt draws out moisture which helps keep the zucchini from getting mushy.

I really love the flavors in this Sautéed Zucchini recipe, sometimes they can seem bland but I think the seasonings really add a lot.
The shallot paired with garlic, salt, pepper and an italian herb blend really makes the flavor of this recipe POP! Trust me, you will fall in love with these flavors.
Of course you can always flavor it with your favorite seasonings and this is just a base recipe, but we highly recommend this combination.
HOW TO STORE:
This should keep in an airtight container such as a Tupperware container or a ziptop bag in the refrigerator for up to 2 days.
I would recommend reheating in the pan so you can add a little crisp back to the zucchini opposed to microwaving it which might make it more watery.
TIPS AND TRICKS:
- If you want to draw out some moisture of your zucchini salt it on paper towels before cooking and pat dry.
- You can replace the shallot with a regular onion if you’d like.
- You can use fresh chopped garlic or minced from a bottle.
- You can easily buy italian herb blend seasoning at your local grocer.
- If you want to add a little more flavor, add some bacon to this recipe, it’s absolutely delicious.
