Delicious, refreshing and super easy this Summer Tortellini Salad is what you are going to want on your menu when that hot weather hits!
I’m semi addicted to any and all things tortellini related. It’s just one of those things. I have always loved pasta, but when it’s pasta that is filled with cheese, my heart melts.
Some of my favorite tortellini recipes that we have on the site include Tortellini Alfredo, Garlic Parmesan Tortellini Salad and Caprese Tortellini Salad.
I’m an admitted carb lover and I will never deny that so summer pasta salads have always been one of my favorite go-to’s during these hot months.
WHY THIS RECIPE WORKS:
- With minimal ingredients and effort this salad comes together quickly.
- You can switch up the vegetables in this salad to match what you really enjoy.
- This can easily be doubled to serve for larger gatherings.
This Tortellini Salad is one of my favorites. It has fresh vegetables that I love in it, it’s served cold and obviously it has the tortellini.
It also helps that it is super quick to whip up, minus the chilling part. But trust me this salad is better cold, cold salads are the epitome of summertime.
WHAT TYPE OF TORTELLINI DO I USE?
We used multi colored tortellini for this recipe because we thought it was a fun color but you can use just any regular cheese filled tortellini.
You can use fresh or frozen as long as it is cooked. It doesn’t matter as long as you have 4 cups you will be good!
HOW TO MAKE SUMMER TORTELLINI SALAD, STEP BY STEP:
- Chop your vegetables and set them to the side.
- Cook your tortellini according to package directions, run under cold water, drain and place in bowl.
- In bowl add your mayonnaise, Italian dressing, parmesan cheese, parsley and black pepper and whisk until combined.
- Pour over tortellini, add your vegetables and stir to combine and refrigerate about 2 hours before serving.
How much easier can this Summer Tortellini Salad get? Seriously, this is one of those recipes that we can’t wait to whip up every summer.
Our kids surprisingly love it, they are sometimes picky eaters but they are cold salad lovers just like us, so they will pretty much eat anything even if it has peppers in it!
I don’t know why it is that way with some people they will eat certain things in specific dishes but not in others, I will never understand, but as long as it’s eaten it really doesn’t matter.
HOW TO STORE:
Since this is a cold salad we do like to make sure that it is kept refrigerated when it is not being stored. You can keep it at room temperature for about 2 hours.
To store any leftovers place in a ziptop bag or airtight container and it should keep in the refrigerator for up to 3-4 days.
This Summer Tortellini Salad has such great flavors that really mix well with all the ingredients that go in it. With a little bit of cheese, italian dressing and mayo its not only creamy it’s super flavorful.
This is one of those salads that will be the hit of the summer parties, I know that I get asked for the recipe all the time, so now I’m sharing it with all of you!
TIPS AND TRICKS:
- Make your pasta ahead of time and store it in the refrigerator so it has time to cool which will cut down on the chilling time.
- You can also make your dressing ahead of time.

Summer Tortellini Salad
Ingredients
- 4 cups Cheese Tortellini
- 1/2 cup Mayonnaise or Whipped Salad Dressing Miracle Whip
- 1/2 cup Italian Dressing
- 1 Tbs grated Parmesan Cheese
- 1 Tbs chopped Parsley
- 1/2 tsp Black Pepper
- Half of a Cucumber sliced
- Half of a Red Onion finely chopped
- Half of a Green Bell Pepper finely chopped
- Half of an Orange or Red Bell Pepper finely chopped
- 1 cup Cherry Tomatoes halved
Instructions
- Boil and drain your tortellini and set aside.
- Meanwhile, in a small bowl whisk together your mayonnaise, Italian dressing, parmesan cheese, parsley and black pepper until combined.
- In a large bowl combine the tortellini, cucumber, onion, bell peppers and tomatoes.
- Gently fold in the sauce and stir to combine.
- Refrigerate for at least 2 hours before serving.
- Sprinkle with a little more parsley or parmesan before serving.
