We usually have an overabundance of zucchini every year and I’m never made because there is just so much you can make with it.
These Zucchini Fritters are a delicious savory side dish or appetizer recipe that we absolutely love to make.
Literally you will have all the ingredients on hand at home and they take less than 30 minutes from start to finish.
I love quick and easy recipes that don’t lack on flavor and these Zucchini Fritters are one of them.
Top with some sour cream and chives and have a little extra tastiness in each and every single bite.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Zucchini
Salt
Egg
Parmesan
All-purpose flour
Black pepper
Garlic powder
Oil for frying
Chopped chives for serving (optional)
Sour cream, for serving (optional)

HOW TO MAKE ZUCCHINI FRITTERS, STEP BY STEP:
- Shred zucchini with cheese grater, toss with salt, then place in colander over a bowl and let it sit for 10 minutes.
- Move shredded zucchini to a cheesecloth, then gently squeeze to remove as much liquid as possible.
- Move to a mixing bowl and add egg, Parmesan, flour, seasonings, and baking powder, the mix until combined.
- Add oil to a large skillet and heat over medium heat.
- Drop 2 tablespoon sized spoonful’s of the zucchini mixture into the preheated skillet, pressing flat with an oiled spatula.
- In batches, heat for 3 minutes, then flip and cook for an additional 3 minutes.
- Move fritters to a paper towel lined plate.
- Top with sour cream and chopped chives if desired and serve.

WHY DO YOU HAVE TO DRAIN THE ZUCCHINI?
Zucchini contains a lot of water, so you will want to remove that excess water before frying.
If you do not drain the zucchini you will more than likely have a recipe that will not stick together like it should.
This is an easy step and one that should not be skipped.
WHAT IS THE BEST WAY TO SHRED THE ZUCCHINI?
So there are two ways that we do this, we either use our box grater which will take a little longer time.
Or you can use your food processor with the shredder blade attached which is much more convenient and quicker.
DO I HAVE TO USE THE PARMESAN CHEESE?
No, this is an optional ingredient. We love it in there for a little contrast in flavor and texture.
I highly recommend giving it a try as it really helps enhance these slightly, but you can leave out if you do not have it on hand or do not want to include it.
CAN I ADD THE CHIVES INTO THE ZUCCHINI FRITTERS?
Yes! If you would like to have more of that onion type flavor in your fritters you can choose to add the chives into the mixture instead on top.

HOW TO STORE:
Although these are best eaten when they are first made, they can be stored in an airtight container where they will keep in the refrigerator for up to 4 days.
They can also be frozen, place in a freezer bag or container and they will keep for up to 3 months.
To defrost, remove to the refrigerator until thawed. To reheat, place back in a pan until heated through or in the microwave again until heated through.
TIPS AND TRICKS:
- This recipe can easily be doubled.
- Use a box grater or food processor to shred your zucchini.
- The parmesan can be left out of the recipe if you do not want to include it.
- The chives can be added directly into the mixture before frying.
- These can be frozen, see above on how to do that.
- Make sure you drain the zucchini well!
- Top with sour cream or use for dipping to serve.
