Zucchini Fritters
With easy ingredients and minimal time, these Zucchini Fritters are a great side to any of your favorite meals, or as the perfect appetizer.

- 2 medium fresh zucchini
- 1 teaspoon salt
- 1 large egg beaten
- ¼ cup grated Parmesan
- ½ cup all-purpose flour
- ¼ teaspoon ground black pepper
- ¼ teaspoon garlic powder
- Oil for frying about 1 ½ Tablespoons
- Chopped chives for serving
- Sour cream for serving
Shred zucchini with box grater or food processor, toss with salt, then place in colander over a bowl and let it sit for 10 minutes.
Move shredded zucchini to a cheesecloth, then gently squeeze to remove as much liquid as possible.
Move to a mixing bowl and add egg, Parmesan, flour, seasonings, and baking powder, the mix until combined.
Add oil to a large skillet and heat over medium heat.
Drop 2 tablespoon sized spoonful’s of the zucchini mixture into the preheated skillet, pressing flat with an oiled spatula.
In batches, heat for 3 minutes, then flip and cook for an additional 3 minutes.
Move fritters to a paper towel lined plate.
Top with sour cream and chopped chives if desired and serve.
- The sour cream and oil are not included in the nutritional value.
- This recipe can easily be doubled.
- Use a box grater or food processor to shred your zucchini.
- The parmesan can be left out of the recipe if you do not want to include it.
- The chives can be added directly into the mixture before frying.
- These can be frozen, see above on how to do that.
- Make sure you drain the zucchini well!
- Top with sour cream or use for dipping to serve.
