Who doesn’t love Buffalo Chicken Dip? I know that I’ve always been a fan, but how about making this Buffalo Chicken Grilled Cheese?
I love sandwiches, and when I can turn some of my favorite flavors into other things, we go for it.
This recipe is perfect for lunch or dinner and served with any of your favorite sides and dipping sauces.
Filled with blue cheese, colby monterey jack cheese, celery and buffalo chicken all grilled on Texas toast makes this Buffalo Chicken Grilled Cheese epic.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Boneless skinless chicken breasts
Hot sauce
Texas toast
Butter
Blue cheese crumbles
Colby and Monterey Jack cheese
Sour cream
Black pepper
Celery
Garlic paste
Worcestershire sauce
Onion powder
Paprika
HOW TO MAKE BUFFALO CHICKEN GRILLED CHEESE, STEP BY STEP:
- Add chicken breasts to a saucepan over medium heat. cover with 3 cups of chicken broth and 1 tbsp hot sauce. Bring to a boil and boil for 7 minutes.
- Meanwhile, prepare Buffalo sauce. Heat a small saucepan over medium heat. Add all ingredients and stir to combine. Bring to a simmer and cook for 3 minutes. Remove from heat.
- Next, prep the Texas toast. Evenly coat each slice with butter on one side, set aside.
- Shred the Colby Monterey Jack cheese into a bowl and combine with bleu cheese crumbles, sour cream, and coarse black pepper, mix well.
- Spread cheese mixture onto the non-buttered sides of the bread.
- Preheat a large skillet over medium/low heat.
- Remove chicken breasts from broth and add to a large mixing bowl. Shred, then combine with buffalo sauce and chopped celery.
- Add 2-3 spoonsfuls of chicken onto the bread. Close the sandwich and place onto the skillet.
- Cook for 4-5 minutes- just until the bread reaches a golden-brown color. Flip and repeat with the other side.
- Serve and enjoy!
WHAT KIND OF BREAD SHOULD I USE?
For this recipe we used Texas toast as it is a nice thick and sturdy bread. You want a thicker bread since this has a filling in it.
Some other breads that would work for this Buffalo Chicken Grilled Cheese include: sourdough, brioche, ciabatta, sliced Italian, etc.
CAN I USE ANOTHER CHEESE?
We highly suggest using the blue cheese crumbles for this recipe to really give it that authentic buffalo chicken flavor.
If you are not a blue cheese fan you can replace the cheese with another cheese like cheddar, pepper jack, gouda or gruyere.
WHAT IS THE BEST BUFFALO/HOT SAUCE TO USE?
We like to use Franks for this but another great one is Buffalo Wild Wings or Sweet Baby Rays.
You can use your favorite for this and you can go as hot or as mild as you’d like.
WHAT CAN I SERVE WITH THESE SANDWICHES?
There are so many different choices when you want to serve a side dish along with this recipe. Some of our favorites include:
- Mozzarella sticks
- French fries
- Salad
- Chips
- Onion rings
- Macaroni and cheese
Whatever you think would be great to complement the flavors of these sandwiches will work great!
HOW TO STORE:
These are best when they are first made. You can store the chicken and cheese mixture separately in airtight containers in the refrigerator where they will keep for up to 3-4 days.
We do not recommend freezing this recipe.

Buffalo Chicken Grilled Cheese
Ingredients

- 3 Tablespoons softened butter salted or unsalted depending on preference

- 4 ounces block Colby and Monterey Jack cheese
- 2 Tablespoons sour cream
- ยฝ teaspoon coarse black pepper
- Chopped celery as much or as little as youโd like
Buffalo Sauce:
- ยฝ cup hot sauce
- 3 Tablespoons salted butter
- 1 teaspoon garlic paste
- 1 teaspoon worcestershire sauce
- ยฝ teaspoon onion powder
- ยฝ teaspoon paprika
