Po’ Boy’s have always always always been one of my favorite recipes in the world. I love chicken or shrimp, I don’t have a real preference when it comes to these sandwiches.
My kids absolutely adore these as well. Which is good, because it’s always hard to find a quick and easy dinnertime recipe, especially now that school has started back up.

Literally, this recipe is effortless and that is why it has become such a bit hit in our household, minimal ingredients and time are essential to our lifestyle!
HOW TO MAKE MAKE A SHRIMP PO’ BOY STEP BY STEP:
Place your frozen popcorn shrimp on baking sheet and bake according to package directions (Photos 1 & 2).
In bowl add mayo, ketchup, worcestershire sauce, garlic salt and pepper and whisk together until combined (Photos 3 & 4).
To assemble sandwich, slice your sub buns down the middle but not all the way through, slather each side of buns with the sauce, place tomatoes on bottom, followed by shrimp then shredded lettuce, drizzle with a little more sauce if desired (Photo 5).
WHAT IS A PO’ BOY?
A Po’ Boy is a sandwich from the south, mainly originating in Louisiana, that consists of meat (primarily shrimp but other seafood and sometimes beef as well), served on a baguette type of bread and dressed with lettuce tomato and various other toppings.
Some use a remoulade sauce, which our’s does and some use a spicy mustard or just plain mayonnaise. There are so many variations out there, but this Easy Po’ Boy Recipe is one of my favorites.
I know that a lot of people will absolutely say that this is totally not a traditional Po’ Boy Sandwich at all, and I’m ok with that.
This is our version of a quick and easy Po’ Boy that we have found out that everyone loves, not because of it’s simplicity, but the flavors work well together.
The remoulade sauce that we make is super simple and stores well in the refrigerator. I also suggest making more, because we love using it for dipping our sandwiches into.
Like I said I have never been a huge fan of shrimp, unless it’s breaded and fried, some of my other favorite recipes using breaded popcorn shrimp include: General Tso’s Popcorn Shrimp, Sriracha Honey Sweet Chili Popcorn Shrimp and these Crispy Sweet Chili Shrimp Tacos.
TIPS AND TRICKS FOR MAKING THIS SHRIMP PO’ BOY RECIPE:
- You can bread and deep-fry your own shrimp if you like, we find it easier to use the popcorn shrimp from our local grocer.
- Make a large batch (we listed a larger batch of sauce in the recipe) of the sauce, it stores well in the refrigerator and is great on a lot of things.
- You can grill your bread before hand in some butter if you like a toastier bun.
- Slice the tomatoes thinly, that has always been one of our big things and helps the sandwich from getting soggy.

Ingredients
- 23-28 oz pkg frozen popcorn shrimp
