I have to admit, we are huge chicken people around here. It is one meat that we cook with all the time.
Doesn’t matter if we use breasts, thighs, wings, shredded – there are just so many delicious recipes you can make with chicken.
These Roasted Chicken Thighs are a dinnertime staple in our house and on our menu rotation at least once a month.
My husband is a real fan of dark meat so he is always up for a good chicken thigh recipe, especially this one.
These are super simple to throw together and they go perfect with pretty much any side dish imaginable.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Garlic powder
Onion powder
Ground paprika
Black pepper
Basil, dried
Oregano, dried
Rosemary, dried
Unsalted butter
Soy sauce
Olive oil
Lemon juice
Chicken thighs, bone in and skin on
Chopped parsley, optional
HOW TO MAKE ROASTED CHICKEN THIGHS, STEP BY STEP:
- In a large bowl, combine melted butter, soy sauce, olive oil, lemon juice, garlic powder, onion powder, paprika, pepper, basil, oregano, and rosemary.
- Place the chicken thighs in the bowl and use a rubber spatula to move the chicken around and get the marinade evenly coated over all the thighs.
- Cover the bowl with a sealable lid or plastic wrap and place in the refrigerator. Let the chicken marinate for 20-30 minutes.
- Preheat the oven to 400 degrees Fahrenheit and place an oven-safe wire rack on top of a baking sheet.
- Once done marinating remove the chicken from the refrigerator and place the chicken on the rack and bake for 25-30 minutes or until the core temperature of the chicken is 165 degrees Fahrenheit and the thighs are golden brown.
- Remove from oven and plate and sprinkle with chopped parsley if desired.
- Serve with your favorite sides.
WHAT HEAT DO THESE NEED TO BE ROASTED AT?
We roast our chicken thighs at 400 degrees F. We find that this is the perfect temp to get them golden on the outside but still juicy on the inside.
DO I NEED TO MARINATE THE CHICKEN FOR 30 MINUTES?
We highly recommend marinating the chicken, this will let the flavors marry and soak into the skin of the chicken thighs.
If you choose not to marinate these Baked Chicken Thighs, then you run the risk of not having all the delicious flavor from the marinade itself.
HOW DO I KNOW WHEN MY CHICKEN THIGHS ARE DONE?
We like to use a kitchen thermometer to check the internal temperature of the chicken.
These Roasted Chicken Thighs will be done when the internal temperature reaches 165 degrees F and are golden on the outside.
WHAT CAN I SERVE WITH ROASTED CHICKEN THIGHS?
These go great with so many things, some of our favorites include:

HOW TO STORE:
These can be stored in an airtight container in the refrigerator where they will keep for up to 3 days.
You can also freeze these Baked Chicken Thighs, place in a freezer container or bag and they will keep in the freezer for up to 1 month.
To defrost, remove to the refrigerator until thawed. Reheat in the oven at about 350 degrees F in a pan or on a baking sheet with a little bit of water or broth at the bottom and cover with foil and bake until internal temperature reaches 165 degrees F.
You can also reheat these in the microwave until heated through, this may dry out your chicken though.
