Loco Moco is a simple dish that isn’t super tropical, but it’s authentic to Hawaii which makes it a superb Hawaiian recipe. I love that it only takes about 30 minutes to throw together and I have a fantastic, filling, comfort meal to serve the family.
This is a straightforward but hearty and satisfying meal that we absolutely loved since we first tried it. I can see why it is so popular as a lunch or dinner option.
The savory gravy is super easy to whip up and really adds a great flavor touch to the whole thing. I mean, what’s better than a burger with an egg on top, sitting on a bed of white rice, and all smothered in a dark gravy?
Since we’re making the burger inside in a skillet, you can easily make this all year long. Which we do, the kids regularly ask for it and since I’m in love I never say no.

INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM)
Ground beef
Garlic powder
Onion powder
Kosher salt
Pepper
Low sodium beef broth
Cornstarch
Beef bouillon cube
Worcestershire sauce
Unsalted butter
Heavy cream
Eggs
Hot cooked white rice
Green onions, for garnish
HOW TO MAKE LOCO MOCO, STEP BY STEP:
- Mix together the ground beef, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Divide the mixture into fourths and form into patties.
- Over medium heat, heat a cast iron skillet or large skillet. Add the patties to the heated skillet and sear patty on both sides. Continue to cook burger to your desired temperature, up to 15 minutes total.
- While the patties are cooking, make the Hawaiian Loco Moco gravy. Whisk together the beef broth, cornstarch, bouillon, garlic powder, onion powder, and Worcestershire sauce in a small saucepan.
- Place the saucepan over medium heat and cook, stirring occasionally so it doesn’t stick or burn. Make sure the bouillon cube breaks up, and cook until the mixture thickens, which typically takes about 8 minutes. Take it off the heat and stir in the butter and heavy cream, and set aside.
- Heat a separate nonstick skillet over medium heat. Add the butter to the pan and let it melt. Crack the eggs into the pan and season with salt and pepper to taste. Cook until eggs are sunny side up or over easy, per your preference.
- To serve, add hot rice to your serving plate. Top with burger patty, add gravy then an egg on top. Garnish with green onions, serve and enjoy.
WHAT IS LOCO MOCO?
Loco Moco is a traditional Hawaiian dish that is quite popular. Typically, it’s made of a bed of white rice, a burger patty, an egg, and the loco moco gravy.
WHERE DID THE LOCO MOCO COME FROM?
It’s a Hawaiian meal that is said to have been made by 15 teenage boys, called the Lincoln Wreckers, at a diner in Hilo, Hawaii.
This dish was invented in 1949, so it’s been around well over 70 year! When a recipe sticks around for that long, you know it’s good.
CAN I MAKE THIS SPICY OR ADD OTHER THINGS IN?
I simply seasoned the burger patty so it was not overwhelming and every element could shine. But, if you want to amp up the flavor you can add some ketchup, worcestershire, A1, bbq, or even hot sauce right into the patty!
Other seasonings that would be good: cayenne, smoked paprika, lemon pepper, chipotle powder, everything seasoning, or cajun seasoning.
If using additional sauces or seasoning mixes, I would not add additional salt as these normally contain salt already. I suggest doing a taste test before salting.
HOW TO STORE:
Store leftovers in an airtight container in the refrigerator for up to 3 days. You can reheat this in the oven or microwave.
I don’t recommend trying to freeze this recipe for later.
TIPS AND TRICKS:
- To make this even easier and faster, you can use your favorite canned or instant brown gravy.
- You can get all the skillets going at once if you are short on time. I prefer to do each one at a time, but it’s not necessary.
- While I have a hard time messing with a classic recipe like this, if you’re feeling adventurous, add some cheese curds or bacon on top.
- I don’t suggest trying to freeze leftovers.
- You don’t have to use ground beef. It is simple enough to swap out for ground turkey, chicken, or another alternative. Just make sure you cook it appropriately.
- Other spices can be used, see above for ideas.
