Lasagna is one of the most requested recipes in our house. Everyone loves it, I used to never be a fan until I started making it on my own and cam up with my favorite flavors.
This Instant Pot Lasagna Soup is pure comfort in a bowl and it takes the time out of layering and baking a real lasagna, so that is one thing that really makes me love this recipe.
I love the Instant Pot and we love to to utilize it as much as possible and I love lasagna and soup so why not combine the to and make Lasagna Soup?

I just find soup super comforting and we do make it all year round, there is no holds barred when it comes to soup in this house especially with this Lasagna Soup.
It encompasses every flavor of your regular lasagna but breaks it down and makes it so much easier and faster to make, so why not?
WHY THIS RECIPE WORKS:

There is no reason to not love this Instant Pot Lasagna Soup, all of the flavors and the cheeses used really just amp up the flavor and I just feeds your soul.
HOW TO MAKE INSTANT POT LASAGNA SOUP, STEP BY STEP:
- Using the sautรฉ setting, brown the ground beef until fully cooked and no longer pink.
- Add the onion and Italian seasoning and cook for 3 minutes or until tender.
- Add garlic and cook for one additional minute.
- Add the crushed tomatoes, tomato sauce, broth, salt, pepper and broken lasagna noodles. Stir thoroughly.
- Cook on manual high pressure for 6 minutes with the lid fully sealed and the valve in โsealโ position. Quick release when finished.
- Add the cheeses, stir thoroughly and serve.

CAN I MAKE THIS HEALTHIER?
Although this soup is pretty healthy the way it is there are some changes you can make to lighten it up a bit.
- Use low sodium tomatoes and sauce.
- Use less cheese (focus on the ricotta and parmesan as they have the biggest flavor impact).
- Use low sodium chicken broth.
- Choose quality lean ground beef or substitute with turkey.
These are some of the changes we have made in the past to make a bit more healthy and they have always turned out great with great flavor. So there are some options.
But since there is pasta involved you will still have that higher carb impact on this.
HOW TO STORE:
When properly stored in an airtight container such as a large ziptop bag or a Tupperware container , this soup can last 4-5 days in the refrigerator.
When cooled, the cheese will kind of clump together and may sink to the bottom of the dish. So, when you are reheating be sure to get some in your bowl and the problem will resolve once it is heated.
CAN I SUBSTITUTE THE GROUND BEEF?
Absolutely! You can substitute it for Italian sausage, ground chicken or ground turkey. We love swapping out the ground beef with italian sausage for the flavor.
We also like to do half and half of the ground beef and Italian sausage because we love those two together and we already do that with our Homemade Spaghetti Sauce.
This Instant Pot Lasagna Soup is just tasty, easy and delicious. It is a base soup that you can add to as you’d like, but we love it just as it is.
This feeds a crowd and everyone seems to love it, so it’s something that we keep on our menu rotation more often than not.
TIPS AND TRICKS:
- I do not recommend freezing this soup as reheating would make the noodles soggy.
- You can make this a little healthier, see my tips above.
- You can add to this soup as you’d like, mushrooms, peppers, etc.
- You can use diced potatoes instead of crushed tomatoes, we have used the petite diced in the same amount.
- You can also use beef broth in this recipe instead of chicken.
This Lasagna Soup is perfect for everyone, it is great to bring to gatherings, or have at holiday meals where you want a change. We don’t hold back when it comes to this recipe.

Ingredients
- 1 lbs ground beef
- 1 small onion chopped
- 1 Tbs Italian seasoning

- 1 28 oz can crushed tomatoes
- 1 15 oz can tomato sauce
- 4 cups chicken broth or beef broth
- 1 tsp salt
- 1 โ2 tsp pepper
- 9 lasagna noodles broken into small bite sized pieces
- 1/2 cup mozzarella cheese shredded
- 1/2 cup parmesan cheese shredded
- 1 โ2 cup ricotta cheese
- Fresh Parsley for garnish
Instructions
