Fresh, delicious and easy this Homemade Strawberry Cake has diced strawberries in the cake batter and then frosted with a light, fresh, strawberry cream cheese frosting.
I can’t resist a good strawberry dessert. There is something about the ripe freshness of strawberries that really draws me in. Now I really don’t like strawberries by themselves, but in a dessert, I’m hooked.
We are lucky enough to have a strawberry farm just a few miles from us, and we usually take the kids there each year and get hoards of strawberries which usually I end up freezing for later use.

So the flavor of this cake gets a little enhancement from a pack of strawberry jello. Now the color of your final cake will be dependent on the brand of jello that you use.
We have a little corner store in town and I usually buy their brand and it doesn’t really give that potent red pop like you would find with some other brands, so I like to add just a few drops of food coloring to make it a little more colorful.
But this could be bright red also, so if your cake isn’t as vibrant or is more vibrant than my photos, just remember, all jello apparently is not created equal.
INGREDIENTS YOU NEED:
- Butter
- Sugar
- Eggs
- Vanilla
- Flour
- Strawberry jello
- Baking soda
- Milk
- Strawberries
- Cream cheese
- Powdered sugar
This is Homemade Strawberry Cake is one of the most requested cakes in my house. Literally we never have enough left. We used to make just a 9″x13″ pan of this, but since everyone always wanted more we decided to kick it up a notch and go bigger.
Sheet cakes are one of my favorite cakes anyways, they are super simple to whip up and just the right size of slice for me to handle. I mean I could inhale the whole cake if I were able to, but we won’t get into that.
HOW TO MAKE STRAWBERRY CAKE:
- Preheat oven to 350.
- Line a 12″x17″ baking sheet with parchment paper and lightly spray with non-stick cooking spray, set aside.
- In stand mixer beat your butter and sugar until light and fluffy.
- Add in your eggs, one mixing well after each addition, then add in your vanilla until combined,.
- In large bowl, whisk together flour, jello and baking soda.
- Alternate adding your dry ingredients and your milk until combined.
- Lastly fold in your diced strawberries.
- Spread into prepared pan and bake for 22-25 minutes or until slightly golden on top, remove from oven and cool completely.
- To make your frosting in stand mixer add your cream cheese and butter and beat until creamy.
- Add in your powdered sugar one cup at a time until combined.
- Lastly add in your strawberry puree, if mixture is too runny add a little more powdered sugar.
- Spread over cooled cake and serve.
I’m telling you guys, if you bring this Homemade Strawberry Cake recipe to any gathering, you will be everyones favorite and everyone will be asking you for the recipe, no joke. It never fails with me.
This has got to be one of my most favorite strawberry desserts I made. And usually we make a ton of strawberry desserts, but this strawberry cake is near and dear to my heart.
My non-sweets loving husband inhales this cake, so that has to say something. My daughter who is super picky also keeps asking for this, so if I need something I know everyone will love this is it.
TIPS AND TRICKS:
- Add drops of food coloring into the cake batter to give it a nice rich red/pink color.
- Not a fan of diced strawberries, puree your strawberries and stir into cake batter.
- You can dice strawberries instead of puree them for your frosting mixture as well.
- Add 1 tsp vanilla extract and 1 tsp strawberry extract for a more potent strawberry flavor.
This Strawberry Cake is one dessert that needs to be made this year, no ifs, ands or buts about it. I’m telling you to run into that kitchen and whip it up now, its sooooooo good.

Unsalted you can use salted just leave out the salt in the recipe.

Yes, as long as the pan is not over filled. I would leave at least 1/2-1/4″ to let the cake rise.
