If you’ve been around a while, you know I’m famous around our neighborhood for my Beer Brats at our regular neighborhood block parties. When I showed up to the party with these stuffed brats for dinner, everyone got excited because they knew they’d be good.
Trust me, when you make these and get to sink your teeth into Grilled Cheese Stuffed Bacon Wrapped Brats, you’ll see why. There are so many tasty elements that its hard to pick what is the best.
These brats are extremely good and soooo flavorful, there are a lot of flavors going up but they all work together perfectly. And, they’re a lot easier to put together than they seem!

WHY THIS RECIPE WORKS:
- So much flavor in these brats from the beer, bacon, and cheese that you don’t need any condiments.

INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM):
Toothpicks
Water
Extra sharp cheddar cheese
Bratwursts
Bacon
Sweet bbq sauce
Lager beer
Large sweet onion
Olive oil
Kosher salt
Pepper
Hot dog buns
HOW TO MAKE CHEESE STUFFED BACON WRAPPED BRATS, STEP BY STEP:
- In a small glass bowl, soak the toothpicks in water for an hour. This helps them not burn while they’re on the grill.
- Cut the cheddar cheese into ยผ-inch wide strips and set aside.
- Slice the brats down the length of them and cut in about ยพ of the way, leaving the bottom casing intact. Stuff one piece of the cheese in the brat lengthwise. Pinch the opening of the brat over the piece of cheese as best as you can.
- Tightly and carefully wrap two pieces of bacon around the length of the brat and secure it at both ends with a toothpick. Evenly wrap the brat in the bacon, this will help the cheese stay inside.
- Stir the bbq sauce and the beer together in a small bowl and set it aside.
- Remove the onion skin and root and slice the onion about 1/4th of an inch thick into rounds. In a medium-sized bowl, separate the onion layers. Toss them with olive oil, salt, and pepper.
- Prep your grill over medium heat. Once it’s hot, turn it down to medium-low heat.
- Place the stuffed and wrapped brats directly onto the grates, cut side up and grill for about 5 minutes, start rotating the brats until the bacon cooks on the outside and an internal temperature reaches 160ยฐF. Some of the cheese might leak out, but that is okay and should be expected.
- Baste the brats with bbq sauce all over and continue to cook for about another 5 minutes, or until caramelized. Flip the brats around during this time so the bbq sauce doesnโt burn.
- Once they are browned nicely and reach an internal temperature of 165ยฐF, they are done, about 20 minutes total time on the grill.
- While the brats are grilling, that’s when you cook the onions. I like to make a little foil tray to put the onions in and stir them around every couple of minutes to prevent burning, they are ready when they are soft and lightly browned, they will be done around the same time as the brats.
- When ready to serve the brats, place one into a hot dog bun, top with some of the onions, and serve immediately.
DO I HAVE TO USE BEER?
While you may not think beer is great as a drink all by itself (or maybe it’s your drink of choice), it really makes this recipe!
The beer mixed in with the bbq sauce is very subtle, but beer goes so well with brats I thought this would be a fun addition to this recipe.
If you donโt have or donโt want to use beer, you can use other things in its place, like apple juice, lemon-lime soda, or just water.
WHAT OTHER CHEESE CAN I USE?
For these tasty brats, I used extra sharp cheddar cheese so you can taste the cheese. This way it doesn’t get overpowered all the other ingredients.
Other cheeses that would be good in these brats are pepper jack, mozzarella, colby jack, or monterey jack. Just make sure the cheese is in block form so you can cut it appropriately.
WHAT OTHER MEATS CAN I USE?
This concept of stuffing the brats would also be amazing with kielbasa or Italian sausage! They’d be fantastic to stuff and wrap with bacon.
CAN I BAKE THESE INSTEAD?
These stuffed brats can also be baked. Preheat the oven to 375ยฐF. Place the prepared brats onto a wire rack placed over a sheet tray.
Rotate them every few minutes so the bacon cooks evenly around the brats.
Same as grilling, once the internal temperature reaches 160ยฐF. Baste the brats with the bbq sauce. Turn the broiler onto high and caramelize the bbq sauce on top, keep an eye on them so they donโt burn, serve immediately and enjoy.
HOW TO STORE:
Keep leftovers in an airtight container in the refrigerator where they will keep for up to 3 days.
They can also be frozen, place in a freezer container and they will keep for up to 2 months. To defrost remove to the refrigerator overnight until thawed.
Reheat any leftovers in the oven until warmed through. Do not grill or put the leftover brats in a skillet on the stove as the bbq sauce will most likely burn.
Do not microwave as the bacon will become soggy.
TIPS AND TRICKS:
- The bbq sauce glaze gives it a sweet element to the brat along with getting a tasty char on the outside, I highly recommend not skipping this step.
- If you don’t want to stuff these brats with cheese, that’s fine, just skip the cutting and stuffing steps and go straight from step 1 to 4.
- Instead of using a foil tray for the onions, you can cook them in a skillet on the stovetop or in a grill basket on the grill.
- Serve these with brats with Baked French Fries, Loaded Fries, or Chili Cheese Fries.
- You can freeze these, see my suggestions above.
- If you want to use different meat, cheese, or skip the beer, see my suggestions above.
