If you love untraditional spreads then you need to whip up this deliciously easy Bourbon Bacon Jam. Sweet, spicy and absolutely delicious.
This Bourbon Bacon Jam is well…my jam! It is sweet with a little bit of heat with a little bit of liquor in the mix. It is the perfect combination of all the things.
If you ever wanted something that you can spread or dip all the things onto or into then this jam is what you’ve been looking for.
We have been making this Bacon Jam for years, this post was originally posted in October 2015 and I figured it would need a little bit of a facelift.
WHY THIS RECIPE WORKS:
- With a variety of ingredients the flavor really pops with each and every bite.
- It is really simple to make and is really made in one pan itself.
- This stores really well if you process it and makes amazing gifts.
We had gifted this as presents the first year that we made it and everyone kept asking for the recipe or if we had more on hand.
I mean of course I’m going to share the recipe to this delicious Bacon Jam, how could I not, it is seriously amazing and addicting.
HOW TO MAKE BOURBON BACON JAM, STEP BY STEP:
- Preheat your oven to 425 and layer your bacon on cooling racks on baking sheets and bake for 15- 20 minutes until crispy, remove and crumble.
- Meanwhile in a sauce pan add about 1-2 Tbs of your bacon grease and add your onions and cook until tender, then add garlic and cook 1 minute longer.
- Add your bacon, vinegar, coffee, brown sugar, maple syrup, bourbon, chipotle pepper and pepper to pan.
- Give it a good stir until everything is combined.
- Heat on medium-low for about 1-2 hours until everything is broken down, the liquid is reduced some and it has thickened.
- Remove from pot and place in to food processor and process until you get the desired consistency you like.
You can really break this down as much as you want, if you want it less chunky process for longer times, to have it more thick then process for shorter.
We like ours with larger chunks, but we have also processed it down to where it is almost a paste and it is just as delicious, it really is a personal preference.
HOW LONG DOES THIS JAM LAST?
For this Bacon Jam we recommend refrigerating, it will not last and spoil if it is not sealed in cans and refrigerated.
This will last about 2-4 weeks. I don’t recommend freezing this recipe as it will release too much liquid when it is defrosted to really be enjoyable.
HOW DO YOU EAT BACON JAM?
Now this is the fun part, you can really eat bacon jam on ANYTHING that you want. You can serve it on top of burgers, with crackers.
We also love to spread this on toast as well. We have added it to many different things in the past along with adding to our ground meet for meatloaf and burgers as well.
It makes a really good spread for any type of recipe, if you are making a charcuterie board, this would go absolutely amazing with the cheeses and crackers with that.
WHAT TYPE OF ONIONS ARE BEST?
You essentially can use any type of onions that you want for this recipe, yellow or white. But we prefer the sweet onions, since there is so much flavor in this the sweet onions add a great contrast.
But like I’ve said, we’ve made this so many times and tested it with different onions the only ones that I don’t recommend using would be red onions.
The flavors together will not mix well like a traditional yellow or white onions, so I try to stay away from that for this Bacon Jam Recipe!
TIPS AND TRICKS:
- You can use thick or regular cut bacon for this, we have used both.
- We prefer sweet onions as referenced above.
- You can use any bourbon brand that you like, we usually use Jim Beam as it is our favorite.
- If you want to cut down the heat on this omit the chipotle pepper, it isn’t essential but adds amazing flavor to this recipe.
- Make sure you cook low and slow, this makes sure that everything cooks together nicely and breaks down.
- Use pure maple syrup and not the fake bottled kind.
- If you want a richer flavor use dark brown sugar instead of light brown.

Bourbon Bacon Jam
Ingredients
- 1 pound bacon reserve bacon grease
- 2 medium onions sliced
- 4 cloves garlic minced
- 1/4 cup cider vinegar
- 3/4 cup coffee brewed
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 1/4 cup bourbon
- 1 chipotle pepper in adobo sauce chopped
- Pepper to taste
Instructions
- Preheat oven to 425.
- Place cooling racks on a rimmed baking sheet and layer bacon over top.
- Cook bacon for 15-20 minutes or until crispy.
- Remove from oven and set aside to cool, once cool crumble.
- Taking about 1-2 Tbs of the bacon grease add to large pot.
- Cook onions in bacon grease until tender.
- Add in the garlic and cook for about 1 minute.
- Add crumbled bacon and remaining ingredients and heat on medium-low until the liquid has reduced some and thickened about 1-2 hours.
- At this point you can add your bacon mix to a food processor to break it down to smaller chunks or you can leave it chunkier.
- Place into 2 1/2 pint jars or 4 4 oz jars, seal and refrigerate!
