HOW TO STORE?
Be sure to let the soup come to room temperature, then store in an airtight container in the refrigerator for up to 5 days.
The pasta will continue to soak up liquid, so may have a softer texture once reheated. If it soaked up a lot of liquid, you can add more while reheating
This can also be frozen. I recommend freezing it BEFORE adding the tortellini, as the pasta will otherwise become mushy.
Freeze in an airtight freezer safe container for up to three months. To reheat, thaw in the fridge overnight and heat up in a pot on the stovetop.
This recipe uses fresh ravioli which you can usually find in your pasta section at the store, but you can also use frozen ravioli, just adjust the cooking time a few minutes longer until tender.
WHAT GOES WELL WITH TORTELLINI SOUP?
This soup is really good on it’s own as a stand alone meal but sometimes we serve it with Rolls, a Side Salad or a nice Light Sandwich.
Who doesn’t’ love a soup and sandwich? I know a lot of restaurants offer that as a menu item around here and it always goes well together.
