When it comes to a tasty and satisfying meal, you cannot go wrong with this Steak Quesadilla Recipe. Tender, cheesy and full of flavor.
I have always loved myself a good quesadilla, steak, chicken, shrimp. You name it and I’m there for it.
This Steak Quesadilla Recipe is one of my family’s favorites and we make the at least once a month.
The juicy and tender steak mixed with the onions and pepper all heated together with melty cheese, how can you compare?
Serve this recipe with some of your favorite side dishes and you have yourself the perfect dinnertime meal.

WHY THIS RECIPE WORKS:
- With easy and tasty ingredients, these are quick to put together.
- The marinade on the steak really pushes these over the top with flavor.
- You can add any fillings that you’d like to these Steak Quesadillas.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Olive oil
Smoked paprika
Chili powder
Ground cumin
Salt
Black pepper
Adobo sauce
Sirloin steak
Onion
Green pepper
Garlic
Mozzarella cheese
Flour tortillas
Butter
Lime juice, to serve
HOW TO MAKE A STEAK QUESADILLA RECIPE, STEP BY STEP:
- In a medium sized bowl, mix 2 tablespoons of olive oil, smoked paprika, chili powder, ground cumin, ยฝ tsp salt, black pepper, and adobo sauce. Add in the steak and toss to coat. Cover it with plastic paper and refrigerate for 30 minutes to 2 hours.
- Add tablespoon olive oil into a skillet and place it over medium heat. Add the sliced green bell pepper and sliced onion, then add ยฝ tsp of salt. Sautรฉ for 8 minutes, stirring regularly until soft. Once the onion is translucent, add minced garlic and stir for a minute. Remove from heat and set aside.
- Next cook marinated steak in an iron-cast skillet over medium heat searing the meat from both sides for 2-3 minutes and cook until desired doneness. I like to cook my meat medium or medium well, which is an internal temperature of around 140 degrees F.
- Remove from the pan onto a cutting board and allow the steak to rest for a few minutes before slicing. This helps retain juices and ensures a juicy and tender filling for your quesadillas.
- Slice the steak into bite-sized pieces or strips (slice the steak against the grain. This ensures that the meat is tender and easy to bite into).
- Prepare your quesadillas by laying down a tortilla and adding shredded mozzarella, sauteed veggies, and steak.
- Add some butter into a preheated skillet, place the filled tortilla in the pan, and fold it in half. Cook until the cheese is melted, and the tortilla is golden brown, usually 2-3 minutes per side.
- For added freshness and flavor, serve the steak quesadillas with your favorite toppings, such as salsa, guacamole, sour cream, or chopped cilantro.
- Drizzle with fresh lime juice if desired.
WHAT KIND OF STEAK IS BEST FOR A STEAK QUESADILLA?
Best steak for these quesadillas, opt for a tender cut of steak like sirloin, ribeye, or flank steak. These cuts cook quickly and have great flavor.
We used sirloin for this particular recipe, but any of the ones recommended above will work just as well.
WHAT KIND OF CHEESE IS BEST TO USE?
Mozzarella, Monterey Jack, Pepper Jack or a Mexican blend is what we usually go for.
For optimal melting, grate the cheese for quick and even melting.
CAN I MAKE THESE WITHOUT FOLDING IN HALF?
If you are wanting to make a larger quesadilla you can just top with another tortilla, you will need more cheese most likely as you’ll want to top the steak and vegetables with more cheese.
You also possibly need more tortillas depending on how full you stuff each of your quesadillas.
HOW LONG DO I MARINATE THE STEAK?
You can do this as quickly as 30 minutes or as long as 2 hours. The longer you marinate it the more potent the flavor will be.
If you are in a hurry, go for the 30 minutes. It will still have great flavor, it just won’t be as much as you would get if you marinated it for longer.
HOW TO STORE:
These can be stored in an airtight container in the refrigerator where they will keep for up to 5 days.
They can also be frozen, place in a freezer container and the will keep for up to 3 months.
To defrost, remove from the freezer into the refrigerator until thawed. To reheat, place some butter in a pan and add quesadillas to pan until heated through.
TIPS AND TRICKS:
- Other cuts of steak can be used, see above on some ideas.
- Use any of your favorite fillings, peppers, jalapenos, onions, etc.
- These can be frozen, see above on how to do that.
- Other cheese can be used, see above on what we have used. Also shredding your own cheese helps it melt better.
- You can use 2 tortillas instead of one and not folding in half while heating, but you will need more cheese and possibly more tortillas.
- We use 6-8-inch tortillas for this recipe depending on what we have on hand.
- Make sure to let your steak rest before slicing.
- You can marinate the steak for 30 minutes to 2 hours, the longer you marinate the more potent the flavor will be.
