This delicious Smoked Steak is sooooo tender, juicy and incredibly flavorful. Once I started making our NY Strip Steaks on the grill and in the Smoker, my family doesn’t want them any other way!
Smoked Steak is the perfect summertime steak recipe that you didn’t know you were missing out on. This one is super incredible with a homemade dry rub seasoning and some semi-homemade Lemon Dill Butter to lather on top for even more impeccable flavor.
Trust me when I say, smoking your steak will be your new favorite way to eat your steaks the perfect dinner recipe! There really is nothing better in my opinion, but I might just be a little bit biased!
Once you sink your teeth into these Smoked Steaks you will absolutely understand my reasoning and you will want to use this method as long as you can!
Plus these go with any of your favorite side dishes such as baked potatoes, green beans, side salad, macaroni salad, roasted vegetables and so much more!

INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM)
NY strip steaks
Kosher salt
Garlic powder
Onion powder
Oregano
Pepper
Paprika
Salted butter
Fresh dill
Lemon juice
HOW TO MAKE SMOKED STEAK, STEP BY STEP:
- First, preheat your smoker grill, with the vent closed, to 200F. This usually takes about 10 minutes depending on your smoker.
- Mix the dry rub spices together in a small mixing bowl, and press the rub evenly into the steaks, while the grill preheats.
- When the smoker is ready, place the steaks directly on the grill grate and close the lid to let them smoke for 20 minutes.
- While the steaks are smoking, mix the softened butter, fresh dill, and lemon juice together. Cover the butter and place it in the fridge.
- Open the smoker lid and the vent, and increase the temperature to 450F. Move the steaks to the top rack or onto a cooler place on the grill and allow the fire to establish, which takes about 3 minutes depending on your smoker.
- Now, place the steaks directly over the flame and add 1 Tablespoon of butter on top. Sear the steak for 1 minute on each side, or until the desired doneness is reached. Check out the FAQ section for more info on internal temperatures.
- Remove the steaks and tent with foil to keep warm or serve immediately.
WHAT KIND OF PELLETS SHOULD I USE IN THE SMOKER?
I recommend using a 50/50 blend of Mesquite and Hickory pellets for the best flavor! This is just our personal preference that goes really well with this recipe, but use what you like!
WHAT SHOULD THE INTERNAL TEMPERATURE OF STEAK BE FOR THE DESIRED DONENESS?
Here’s the temperature guide you need to get the perfectly cooked steak. Keep in mind that this recipe was written to create a nice medium-rare steak.
Please alter your searing time as needed to achieve a different level of doneness if desired.
Rare: 120F.
Medium-Rare: 130F.
Medium: 140F.
Medium-Well: 150F.
Well-Done: 160F.
WHY GIVE SMOKING A STEAK A TRY?
It’s super simple! Plus, smoking meat allows for the breakdown of tough, connective tissue, resulting in a much more tender, and delicious, cut of steak, even for those more fatty, tougher cuts of meat!
Smoking your steak also infuses a great, unique flavor that really makes the steak a level up from your traditional grilled steak!
Searing it at the end keeps it nice and juicy and retains those amazing flavors. And finally, this Smoked Steak practically melts in your mouth, it’s soooooo good!
WHAT KIND OF SMOKER IS THE BEST FOR MAKING THIS RECIPE?
I recommend using a pellet grill, but any smoker grill will do! You could use a Camp Chef, Traeger, or Pit Boss, any of them would be great!
Any grill that allows you to smoke AND grill your meats is what we are looking for.
CAN I USE ANOTHER CUT OF MEAT?
No NY Strip Steak? No problem! You can try using a ribeye or T-bone without having to change the recipe, just try to find one of similar size and weight.
WHAT SIDES GO BEST WITH SMOKED STEAK?
Here a few super easy sides that pair nicely when grilling!
HOW TO STORE:
Store any leftovers once they’re completely cooled, in an airtight container or zip top bag in the refrigerator where they will keep for up to 3 days.
To reheat your steak, for best results, reheat on your pellet grill. Preheat your pellet grill to 300F with the vent open and place the leftover steak directly onto the grate for 1-2 minutes on each side and serve.
Don’t forget to add a dollop of the Dill Lemon Butter to your steak again to bring that fantastic flavor back to the steak.
TIPS AND TRICKS:
- Always taste your steaks before salting them, especially since you’re using salted butter in this recipe.
- Use a meat thermometer when smoking your steaks so you ensure that you get your steak cooked to your desired level without overcooking it.
- Always remember that smoked steaks will look slightly different than grilled steaks traditionally look. But, the internal temperature should remain the same between the two cooking methods, so it’s not always smart to smoke your steak and gauge the doneness just by looking at it.
