I think the key to making roasted potatoes crispy is letting them brown to the pan and turning often while cooking. You want each side to get the heat so turning the potatoes to let each side get some of that extra heat is essential to making them crispy!
Now I have some really picky kids that shy away from bold flavors. So when you hear the word herb, a lot of people wonder how much herbs, do they pair well together, and what are they used in. Well these potatoes are one recipe that my kids literally inhaled.
My 9 year old told me when he ate then for the first time that these were the best potatoes that I have ever made. And when I can get compliments like that coming from my kids it’s ALWAYS a win for me.

Technically you can roast any potatoes that you like, they all technically come out the same. But the best roasting potatoes are Yukon Gold for sure! They are a great all-purpose potato to begin with but roasting them in the oven is especially good!
HOW DO YOU MAKE OVEN ROASTED POTATOES?
These Herb Roasted Potatoes are a super simple and flavorful recipe that you can pretty much make in your sleep. You’ll want to wash your potatoes and dice them. Then you add them to a large bowl and toss them with oil and seasonings.
You then place them on a sheet pan and bake them in the oven for about 45 minutes to 1 hour to get the nice crisp and tender potatoes that you love.
We used a mixture of parsley, thyme, rosemary and garlic and sea salt. Now with those spices you literally can’t go wrong. It seem’s like you’re using a TON, but trust me the amounts in the recipe are literally perfect and gives the absolute best flavored potatoes around.

Herb Roasted Potatoes
Ingredients
- 3 lb potatoes diced into 1" cubes
- 1/3 cup olive oil
- 1 Tbs dried thyme
- 1 Tbs dried rosemary
- 1 Tbs dried parsley
- 2-3 cloves garlic minced
- 1/2-1 Tbs sea salt
- !/4 cup shredded parmesan optional
Instructions
- Preheat oven to 400.
- In large bowl add your potatoes and olive oil and toss to cover.
- Add in thyme, rosemary, parsley, garlic and sea salt.
- Mix together until evenly coated and spread on a large baking sheet.
- Bake for 1 hour turning halfway through.
- Place in serving dish and sprinkle with more salt and parmesan if desired.
