So we just got a new smoker. Well let me rephrase that, my husband just got a new smoker. It was an early fathers day present from me that he’s been dying to have. We have an older one and it was due time that we needed to upgrade.
We love wild and crazy foods and these Smoked Armadillo Eggs are one of our favorite recipes to make hands down! They are easy and seriously seriously tasty! If you love a spicy and salty treat that oozes cheese then this recipe is the one that you need.
WHAT MEATS ARE GOOD TO SMOKE?
The meats generally used in BBQ recipes such as brisket, pork shoulder and ribs usually are a tough cut of meat and generally are the perfect ones that you’d love to cook low and slow. This Armadillo Egg recipe uses breakfast sausage, an untraditional meat for the smoker, but seriously amazing.
You can pretty much smoke anything you would like! We recently smoked chicken breasts as well as this meatloaf! And we absolutely loved both the recipes…I think the kids loved the chicken the most!
WHAT TEMP DO YOU SMOKE MEAT AT?
It really depends on what you are smoking. Low in slow is the way to go when it comes to smoking. Brisket and pork butt is generally smoked at 225. Whole chicken is usually at 250. This recipe for the Armadillo Eggs are smoked at 250 as well and we smoke them for 2 hours.
WHAT IS THE BEST WOOD TO SMOKE MEAT?
This also depends on what you are smoking. Oak is usually the go to wood for smoking but hickory which we used in this recipe is a universal wood that works with all sorts of meat. There are so many different flavors out there including but not limited to: Maple, Mesquite, Apple, Cherry, Alder, etc.
CAN YOU BAKE ARMADILLO EGGS?
Yes! You can absolutely bake these if you do not own a smoker! Preheat your oven to 375 and bake for 15-20 minutes until sausage is cooked through.
These Armadillo Eggs are really a fun and unique recipe that is fun for parties. They are spicy but yet toned down by the cream cheese and shredded cheese that they are stuffed with! Literally the perfect combination.
Its all wrapped in pork sausage or you can use any flavor Italian sausage as well and they would be absolutely amazing. But if you want something that will start a fun discussion then these eggs are what you need!

Smoked Armadillo Eggs
Ingredients
- 5 jalapeรฑos cored and seeds scraped out
- 1 lb pork or Italian sausage
- 2-3 oz cream cheese soft
- 1/2-3/4 cup shredded cheddar cheese
Instructions
- Preheat smoker to 250 with hickory chips or any of your favorite.
- Meanwhile mix together your cream cheese and shredded cheese.
- Stuff inside cored jalapeรฑos.
- Split your sausage into 5 equal portions and wrap around your jalapeรฑos.
- Place on a grilling tray and smoke in smoker for 2 hours until internal temperature reaches 160.
