Need a way to use up your corned beef? Then you have to make these easy and delicious Reuben Sliders. A fun family recipe that everyone loves.
I love sliders, always have and always will. I used to post a bunch of sliders recipes but then I just stopped and hadn’t posted them in a while, well today that is changing.
These Reuben Sliders are the perfect way to use up some of that left over corned beef that you may have from your St. Patrick’s Day celebrations.
This is what we usually with our’s every year because I mean who doesn’t love corned beef? I know that I do, the flavor is just amazing and I can’t resist.
These sliders are just as perfect, just like the sandwich but in smaller hand-held form! That is one thing I like about sliders is that they come in smaller portions.
You don’t have to commit to a huge sandwich and not finish it, but with these you can take as you please and won’t feel guilty about not being able to finish anything.

- It is the perfect way to use up any leftover corned beef that you may have.
INGREDIENTS NEEDED (FULL RECIPE BELOW):
Hawaiian rolls
Corned beef
Provolone cheese
Sauerkraut
Thousand island dressing
Butter
Whole grain mustard
You can’t tell me that that list of ingredients doesn’t make you not want to make this Reuben Slider Recipe! You will fall in love, seriously.
If you are already a fan of the traditional Reuben Sandwich then you will absolutely love the slider version of that, super easy and tasty and feeds a crowd.
HOW TO MAKE REUBEN SLIDERS, STEP BY STEP:
- Preheat the oven to 350° F and spray a 9-in. by 13-in. pan with nonstick cooking spray.
- Place the bottom half of the rolls in the pan and spread the thousand island dressing over the rolls.
- Next place the corned beef over the dressing.
- Place the cheese (double layer) over the meat.
- Next add the sauerkraut to the top.
- Place the top of the rolls over the sauerkraut.
- Brush the tops of the rolls with the melted butter then spread the whole grain mustard over the top of the rolls.
- Cover with tinfoil and place in the oven. Bake for 20 minutes. Remove the tinfoil and return to the oven for an additional 5 minutes.
- Remove from the oven and serve.
How much easier can you get than this recipe! I mean seriously. We always have leftover corned beef so we always are looking for different ways too use it up.
These Reuben Sliders have become one of not only my favorites but my kids favorites, I’m super lucky to have older boys who are addicted to all the things in this recipe.
You’d think that a lot of kids would be turned off to it, but luckily mine aren’t and I’m so grateful for that.
WHAT IS A REUBEN?
The Reuben Sandwich is a grilled sandwich that contains corned beef, swiss cheese, sauerkraut, and Russian dressing, grilled between slices of rye bread.
It is commonly found in deli’s around the United States but it is not Kosher because it contains cheese and meat together.

But trust me when I say that you will want to make these Reuben Sliders, you just cannot go wrong with these fun little sandwiches, I’m telling you!
They are just too easy not to make. And if you don’t have leftover corned beef you can absolutely make these with sliced corned beef as well or even pastrami.
HOW TO STORE:
This Reuben Slider Recipe can be stored in an airtight container in the refrigerator for up to three days, you can either heat up in the microwave or place in the oven on a low temp and reheat until heated through.
These can also be frozen. Prepare sandwiches but don’t bake. Place in freezer bag or airtight container and freeze up to 2 months.
To reheat place sandwiches in the refrigerator to thaw overnight, then bake as instructed.
TIPS AND TRICKS:
- You can use Swiss or provolone cheese in this recipe, some people aren’t as keen on Swiss cheese so they use provolone, we have used both.
- You can use Hawaiian rolls or just regular sliders buns.
- We use bottled Thousand Island Dressing for this recipe, but you can make your own homemade if you like!
- If you want Reuben Sliders but don’t have any leftover corned beef you can use deli corned beef for this recipe as well.
- Use all the sauerkraut you’d like on these, what we use is just a general measurement, my boys love more.
- Make sure that the cheese is melted, ovens run at different temperatures so make sure its all melted before removing.
- These can be frozen, see my tips above.

Ingredients

- 12 slices provolone or Swiss cheese
- 1 cup sauerkraut
- 1/4 cup Thousand Island Dressing
- 1/4 cup butter melted
- 2 Tbs whole grain mustard

- Place the bottom half of the rolls in the pan then spread the Thousand Island Dressing over the rolls.
- Place the corned beef over the dressing.
- Place the cheese (double layered) over the meat.
- Next add the sauerkraut to the top.
- Place the top of the rolls over the sauerkraut.
- Brush the tops of the rolls with the melted butter then spread the whole grain mustard over the top of the rolls.
