A tasty and fun dip, this Queso Fundido Recipe is a crowd pleaser. Easy, flavorful and minimal ingredients.
Have you ever fallen in love with a dish that you wanted to make all the time? Well this Queso Fundido Recipe with Chorizo is one of my absolute favorite things ever.
I’m a huge fan of anything made with chorizo but when you add melty cheese and some heat, then you have won me over for good.
This recipe is really super simple, the hardest part is roasting your peppers and skinning them, which is actually pretty easy with my step by step instructions that I will provide below.
This is a great game day dish, appetizer, side dish for your Mexican themed nights or just because you are craving it.
I really don’t think there has to be any special reason to make this Queso Fundido at all, its just too good!
If you are craving something that is super cheesy, meaty and with some spice, then you absolutely cannot go wrong with this recipe.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Poblano peppers
Pork chorizo
Onions
Oaxaca cheese
Chihuahua cheese
Flour tortillas for serving, warmed
HOW TO MAKE A QUESO FUNDIDO RECIPE (WITH CHORIZO), STEP BY STEP:
- Preheat oven to 400 degrees F.
- Roast the skins of your poblano peppers on the direct flames of your gas stove or under the broiler.
- Once the skins are charred, place them in a large Ziploc bag for five minutes.
- Peel the skins off the peppers, deseed, and dice your poblano peppers.
- Add your chorizo to a large oven-safe skillet. Cook until the chorizo is cooked through, breaking apart with a wooden spoon as it cooks. Transfer the chorizo to a plate and set it aside.
- Add the onions to the pan and cook until they have softened.
- Stir in the poblano peppers and half the chorizo.
- Top the chorizo in the pan with the Oaxaca cheese and Chihuahua cheese.
- Top the cheese with the remaining chorizo.
- Place in the oven and bake for 10 to 15 minutes until the cheese is golden brown and bubbly.
- Serve with some warmed tortillas and enjoy.
CAN I USE TORTILLA CHIPS INSTEAD OF TORTILLAS?
You could use chips, but you may need a spoon to spoon the Fundido onto the chip.
The stringy and thick consistency of Fundido tends to break chips more. But it can still be enjoyed with chips if you prefer.
CAN I MAKE THIS SPICIER?
If you would like the dish to have added heat, you can use a spicy or hot chorizo.
Another option would be pickled jalapeños or dice up a serrano pepper and add it.
WHAT CAN I TOP THIS DISH WITH?
If you want to top this Queso Fundido Recipe with some other toppings than you absolutely can! Some ideas include:
- Fresh Diced Tomatoes
- Avocado
- Jalapenos
- Pico de Gallo
These are the most used toppings that we have added, but feel free to add what you’d like to compliment this recipe.
WHAT IS THE DIFFERENCE BETWEEN QUESO FUNDIDO AND REGULAR QUESO?
While both are melted cheese dishes, their characteristics are different. Queso is a thinner, smoother, and creamier dip.
Whereas Fundido is a stringy, thicker, and more hearty melted cheese dish.
HOW TO STORE:
This can be stored in an airtight container in the refrigerator where it will keep for up to 3-4 days.
To reheat, place in an oven-safe dish and heat at 350 degrees F for 10-15 minutes or until the cheese has melted again.
We do not recommend freezing this recipe.
TIPS AND TRICKS:
- If you want to increase the spice in the dish, you can use a hot or spicy chorizo or pickled jalapeños or dice up a serrano pepper.
- Oaxaca cheese can be a hard-to-find cheese. If you cannot find it, then you can use a low-moisture, not fresh mozzarella cheese.
- We DO NOT recommend freezing this recipe.
- Serve this thick, rich, creamy, yet hearty and stringy cheese dish with warm tortillas and a side of warm salsa.
- Corn tortillas can be used in place of flour.
- Toppings can be added to this recipe, see above on ideas.
