With easy to find and flavorful ingredients, this dip comes together in a matter of minutes and makes a nice large batch.
We love bringing this appetizer to parties, gatherings, picnics and cookouts. It is one of those recipes that you don’t have any to bring home.
Serve it up with some chips, or some of your other favorite dippers and you have yourself something that will be your go-to staple for any time of year.
While I really love making this in the spring and summer, we really can’t resist making it all year round, its just that good.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Sour cream
Cream cheese
Fire-roasted corn
Rotel
Cheddar cheese
Taco seasoning
Salt
Black pepper
Smoked paprika
Cilantro
HOW TO MAKE CREAM CHEESE TACO DIP, STEP BY STEP:
- In a large bowl, add the sour cream, cream cheese, corn, rotel, cheddar cheese, taco seasoning, salt, pepper, and paprika to a large bowl.
- Using an electric hand mixer, mix well until combined.
- If serving immediately, add the cilantro and mix to combine.
- If you are making ahead, cover with dip plastic wrap until ready to serve.
- When you are ready to serve, add the cilantro and mix it in well right before serving with your favorite tortilla chips or other dippers.
IS THIS SPICY, OR CAN I MAKE IT SPICY?
This doesn’t have too much of a kick to it, the rotel and the taco seasoning will have the most kick. You can tone it down by using a mild version of both.
If you want to give it a little more spice you can also do that. Use a spicy taco seasoning, add in some cayenne pepper or some of your favorite hot sauce.
WHAT KIND OF CHEESE IS BEST FOR THIS DIP?
While cheddar cheese is a great basic cheese that goes great in many dips like this Cream Cheese Taco Dip, you can use other cheese. Some include:
- Mexican Blend
- Colby Jack
- Monterey Jack
- Pepper Jack
I say start with the cheddar and see how you like it, then you can always switch it up any other time.
DO I HAVE TO USE FIRE-ROASTED CORN?
Sometimes you cannot find the exact ingredients needed, this includes the fire-roasted corn.
You do not need this particular corn in this recipe, it just adds a nice smokey element.
If you do not want to use it or cannot find it, just use regular sweet corn in it’s place.
CAN I ADD ANYTHING ELSE TO THIS CREAM CHEESE TACO DIP?
Absolutely! While we love it just as it is, you can add other things to this dip. Some things that you can add include:
- Chopped Bell Peppers
- Sliced Olives
- Diced Jalapenos
- Black Beans
- Cooked Ground Beef
Whatever you think that would taste good with the ingredients already in this dip, feel free to add! Just make sure that it is good served cold.
HOW TO STORE:
This can be stored in the refrigerator in an airtight container or covered with plastic wrap where it will keep for up to 3 days.
I do not recommend freezing this recipe.

- 14.75 ounce can fire-roasted corn drained
- 10 ounce can rotel drained
- 8 ounces shredded cheddar cheese
