Queso Fundido Recipe (with Chorizo)

- 3 poblano peppers
- 18 ounces pork chorizo
- ½ cup diced onions
- 12 ounces Oaxaca cheese cubed
- 8 ounces chihuahua cheese shredded
- 6 6-inch flour tortillas for serving warmed
Preheat oven to 400 degrees F.
Roast the skins of your poblano peppers on the direct flames of your gas stove or under the broiler.
Once the skins are charred, place them in a large Ziploc bag for five minutes.
Peel the skins off the peppers, deseed, and dice your poblano peppers.
Add your chorizo to a large oven-safe skillet. Cook until the chorizo is cooked through, breaking apart with a wooden spoon as it cooks. Transfer the chorizo to a plate and set it aside.
Add the onions to the pan and cook until they have softened.
Stir in the poblano peppers and half the chorizo.
Top the chorizo in the pan with the Oaxaca cheese and Chihuahua cheese.
Top the cheese with the remaining chorizo.
Place in the oven and bake for 10 to 15 minutes until the cheese is golden brown and bubbly.
Serve with some warmed tortillas and enjoy.
- If you want to increase the spice in the dish, you can use a hot or spicy chorizo or pickled jalapeños or dice up a serrano pepper.
- Oaxaca cheese can be a hard-to-find cheese. If you cannot find it, then you can use a low-moisture, not fresh mozzarella cheese.

- Serve this thick, rich, creamy, yet hearty and stringy cheese dish with warm tortillas and a side of warm salsa.
- Corn tortillas can be used in place of flour.
