A sweet and deliciously refreshing summer drink these Pineapple Mojitos are full of pineapple juice, lime, rum, mint and club soda. Making it a super flavorful and refreshing drink.
I’m a huge pineapple lover, that is one fruit that I could just eat and eat and eat and never get sick of, but add it to a delicious cocktail and this girl is sold.
These Pineapple Mojitos are quick and easy too whip up with minimal ingredients that if you are any kind of drinker you most likely have these on hand.
These are one of my favorite summer drinks to sip on on a hot day or to serve to guest since they are super simple to put together and you can make as much as you’d like.
This recipe that Im including today make 2 large glasses but you can also make this into a pitcher to just pour and serve as you’d like or just double the recipe to make extra drinks.

- You can use a various amount of different brands of liquor for this recipe.
- You can use canned pineapple juice or freshly juiced pineapple juice.
- Double this recipe for more servings.
INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM):
Pineapple juice
Mint leaves
Limes
White rum
Club soda
Crushed ice
Pineapple for garnish
HOW TO MAKE PINEAPPLE MOJITOS, STEP BY STEP:
- Muddle the mint leaves in the glasses. Make sure to have strong bottom glasses or muddle in a cocktail shaker.
- Cut 2 limes into wedges, add into each glass, and muddle. Squeeze the remaining lime to extract the juice, add it to the glasses.
- Add the pineapple juice. Then fill half of the glasses with crushed ice.
- Pour in the rum (1.5 fl oz in each glass) and fill with club soda. Stir. You can adjust the taste with cane sugar if desired. It depends on the sweetness of your pineapple juice.
- Garnish the glasses with a pineapple wedge and mint sprigs. Enjoy.

WHAT KIND OF RUM SHOULD I USE?
You need a white rum for this recipe, any one of your favorite brands will works. Some examples that you can use include:
- Bacardi Superior
- Capitan Morgan Caribbean White Rum
- Calypso Silver Rum
- Cruzan Aged White Rum
CAN I MAKE A LARGE BATCH PINEAPPLE MOJITO?
Yes, you can make this in a pitcher and follow all the directions besides adding the ice, I would reserve the ice for each glass that is filled.
Garnish the pitcher itself with lime slices and pineapple slices as well if you desire or add those to the glass themselves.
Just make sure that you muddle the lime and mint and add the liquid ingredients to the pitcher. The club soda will lose it’s fizz after sitting but it will still be added, otherwise pour over each glass.
CAN I USE FRESH PINEAPPLE?
Yes you absolutely can. The best way is if you have a juicer! Just run your cut pineapple through the juicer and use that, you will want 3/4 cup of pineapple juice.
You can also add the pineapple to a high powered blender with some water and strain. If it is too thick you will need to add some more water, process and strain again until it is juice consistency.
HOW TO STORE:
If you use fresh squeezed pineapple juice this needs to be consumed within 24 hours so if you do make a larger pitcher and not just single glasses cover and place in the refrigerator for that period of time.
TIPS AND TRICKS FOR MAKING A PINEAPPLE MOJITO:
- For a mocktail version, donโt add the rum.
- To pick the right pineapple, smell its base. If it smells sweet, thatโs a good one. If not, the pineapple is probably not sweet enough.
- f you want to make it ahead, please note that freshly squeezed pineapple juice has to be consumed in 24 hours.
- And to keep the bubbles from the club soda, add it right before serving.
- Try with 7Up instead of classic club soda for an even more refreshing taste.
