Easy, flavorful and such a classic recipe brown sugar, pineapple and cherries collide in this delicious Pineapple Upside Down Cake Recipe.
Who loves classic cakes? This girl! I mean sometimes I love to make some wild and crazy cake flavors like this Chocolate Cherry Amaretto Cake, Salted Caramel Cheesecake Cake or this Chocolate Peanut Butter Cup Cake!
Sometimes though, I really like to just keep it simple. Pineapple Upside Down Cake has been one of my favorite flavors for years, we literally cannot get enough of the flavors together.
I even made them into donuts back in the day which everyone also raved about. But this cake recipe is such a super simple recipe and whips up in no time, which I mean when it comes to cake is probably the best thing, right?
PINEAPPLE UPSIDE DOWN CAKE RECIPE
INGREDIENTS NEEDED:
- Flour
- Baking powder
- Salt
- Butter
- Sugar
- Egg
- Vanilla
- Milk
- Pineapple juice
- Brown sugar
- Cherries
As far as cakes go, this one is pretty straightforward, you don’t have frosting to worry about, or layers, so it makes it kinda like the one go-to cake that everyone (well at least most people I know) like to make a time or two.
We like to make this cake all year round, I know that when people normally think of this Pineapple Upside Down Cake recipe they think of summer.
Although it has amazing summer flavors, I’m the type of person who will eat anything all year long. I don’t think things need to be seasonal. So if you’re like me, then welcome to the clan.
HOW TO MAKE PINEAPPLE UPSIDE DOWN CAKE:
- Preheat oven to 350.
- In bowl whisk together your melted butter and brown sugar, spread on the bottom of a 9″ pan, set aside.
- Top with 7 slices of pineapple and fill in the holes and gaps with cherries, set aside.
- In a large bowl whisk together your flour, baking powder and salt, set aside.
- In another bowl beat together butter, sugar, egg and vanilla until combined.
- Add in your dry ingredients and beat until combined.
- Lastly add in your milk and pineapple juice.
- Spoon over pineapples and cherries and gently spread over the top using an offset spatula.
- Bake in oven for about 35-40 minutes until golden and toothpick comes out clean.
- Remove from oven and let cool in pan 5-10 minutes before flipping out onto serving tray.
- Cut and serve warm or cool.
See, how easy is that? I love upside down cakes so much. But something about caramelized pineapple really gets me and I want to eat the whole cake every single time, no shame, no shame and I ain’t judging you if you’re just like me.
SPRINGFORM PAN OR REGULAR 9″ PAN?
This can really go either way, I like to use a high sided regular 9″ pan for this recipe. It doesn’t get super tall where it would overflow but we prefer it.
We have had trouble in the past with springform pans and upside down cakes because of the glaze that is on then so if you choose to use a springform pan I would make sure to wrap it up in foil so it doesn’t leak out and burn in your oven. No sense in waisting all the caramel goodness!
TIPS AND TRICKS:
- If you aren’t a fan of the extra pineapple juice in the recipe, swap it out for milk, or you could use all pineapple juice in stead of the milk, it goes either way.
- You can add some halved pineapple slices up the side if you would like a little more polished look or some more pineapple flavor, super good this way, we have done it many times.
- You can also use half regular sugar and half brown sugar in the batter ingredients to get a little more depth of caramel flavor, our favorite is straight granulated sugar, but have made it with brown and granulated as well.
- Serve with a slice of ice cream over the top when warm, it’s literally heaven in each and every bite.
