Layers of cookie dough, cheesecake and Oreo’s make these Oreo Chocolate Chip Cheesecake Bars an indulgent and delicious and absolutely easy recipe.
I love the combination of cheesecake and cookies together. I mean seriously, there is nothing better than that combination. The texture and flavor just rock.
Now I love me some Cheesecake, but Cheesecake Bars are one of my favorite things ever. Not only these Oreo Chocolate Chip Cheesecake Bars but also my Almond Cheesecake Bars, Peanut Butter Cup Cheesecake Bars and my Lemon Raspberry Cheesecake Bars.
So these Oreo Chocolate Chip Cheesecake Bars are pretty much three desserts in one. You have Cookie bars, cheesecake and cookies all rolled into one dessert.
I mean how can you not fall in love?!?! We fell in love with these many many years ago. We actually posted this recipe back in 2017 but decided it finally needed a facelift.
WHY THIS RECIPE WORK:
- With only 6 ingredients these bars are an easy recipe that whip up quickly and can easily be doubled.
- You can really make them your own by switching them out with the cookie dough and cookie mixture.
- They are amazing warm or cooled and with a scoop of ice cream or a drizzle of chocolate on top just for something extra.
Although it may “look” difficult because you have different layers to this cheesecake bar recipe, they are one of the most simple and most made recipes in our house.
Although they can be eaten warm or cold, I prefer that they are served best when cooled because they hold their structure better and can be eaten with your hand, if they are warm you can totally eat it with a fork.
HOW TO MAKE OREO CHOCOLATE CHIP CHEESECAKE BARS, STEP BY STEP:

Preheat oven to 350. In a 9″x9″ baking dish sprayed with cooking spray, press half of your cookie dough in the bottom of the dish.

Layer Oreos in 4 rows across the top of your cookie dough layer, set aside.

In bowl mix together your cream cheese, sugar, egg and vanilla until smooth.

Spread over the top of Oreos.

Drop tiny pieces of the remaining cookie dough over the top until covered.

Sprinkle with about 1/2 cup crushed Oreos and bake in oven for about 45 minutes or until center is set and top is slightly golden

CAN YOU FREEZE CHEESECAKE BARS?
Absolutely. To freeze these bars bake according to directions and then cool completely. You can cut them into squares or leave them whole and place them on a plate and freeze, remove from freezer and then wrap in plastic wrap and then tinfoil and place back in freezer.
These should be able to be frozen for about 3 months. In my personal recommendation I would cut them and then freeze that way it would be easier to reheat individually.
DO CHEESECAKE BARS NEED TO BE REFRIGERATED?
Anything that contains cream cheese, even if it is baked should be refrigerated. You don’t want to risk any bacteria growing which would cause you to get sick.
This goes for anything like cream cheese frosted cakes as well. When in doubt, refrigerate. Theses should keep in the refrigerator for about 4-5 days.

Also little hands are amazing when making these, they love to press the cookie dough down into the bottom of the pan and to sprinkle the cookie dough pieces on top.
TIPS AND TRICKS FOR MAKING OREO CHOCOLATE CHIP CHEESECAKE BARS:
- Let the cookie dough warm up slightly, this helps when you press it into the baking pan easier.
- When cutting these bars using a warm knife run under tap water lets them cut easily and smoothly.
- You can crush up your Oreo pieces as big or as small as you like for the topping.
- When sprinkling the cookie dough over the top of the cheesecake mixture, try to get smaller pieces, it helps it spread out more and you get more coverage over the top of the bar.
- To check for doneness, stick a toothpick in the center, the cheesecake may still be a little wet, but not coat the toothpick, they will set up the more they cool.

- 16 Oreos , plus more for topping
- 12 oz cream cheese
- 1/3 cup sugar
- 1 egg
- 1 tsp vanilla
Instructions

If I needed to double the recipe (office birthday celebration), what pan size should I use? 9×13 in that case?

I think it would be safe to say that that size pan would work well!

This recipe is misleading. For starters your recipe calls for a 9×13 pan. The pan you are using in your video is not a 9×13 and is more fitting for the recipe. Next….you have to have at least 2 rolls of cookie dough. A half roll that’s stated in your recipe will not cover a 9×13 pan…just impossible cause I tried. Now that little pan you showed in your video would work nicely. Lastly you need to double if not triple the cream cheese mixture to get it to cover the dough and Oreos as shown in your video otherwise ain’t gonna happen! I know cause I just made it.

If you read the recipe correctly you would see that it states a 9”x9” pan. I’m sorry that you had issues but it states correctly and we’ve made this many times and many others have as well. The directions are correct as well as the video.

How much cookie dough is supposed to be left over? The recipe calls to only use half of it as the base. Am i reading this right?

Hi Siobhain, nope the directions state to drop tiny pieces of the remaining cookie dough over the top of the cheesecake layer. So half of cookie dough for bottom and remaining for top.
