WHY THIS RECIPE WORKS:
- With minimal ingredients, it comes together quickly.
- You can easily double or triple this recipe to serve to others.
- The flavors are nice and fruity and just work so well together.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Pineapple juice
Coconut rum
Orange juice
Grenadine
Ice
Orange slices and maraschino cherries for garnish, optional
HOW TO MAKE A MALIBU SUNSET, STEP BY STEP:
- In a cocktail mixing glass, add the pineapple juice.
- Next add the coconut rum.
- Lastly add the orange juice.
- Stir to combine well.
- Grab a serving glass and add the grenadine to the bottom.
- Top with ice and then pour the mixed drink over the ice.
- Garnish with orange sliced and maraschino cherries, optional.
- Serve and enjoy immediately.
CAN I MAKE THIS AHEAD OF TIME?
Yes, if you want to make this in a larger pitcher to serve at a party or to more people, you can add the pineapple juice, rum and orange juice together in a larger pitcher and place in the refrigerator.
When you are ready to serve just add the grenadine and ice to your glasses and pour the mixture over the top.
WHAT KIND OF COCONUT RUM IS THE BEST?
We like to use Malibu for this recipe but other coconut rums can be used, some others brands that have coconut rum you can use include:
- Bacardi
- Parrot Bay
- Captain Morgan
- Cruzan
- Calypso
Use your favorite or what you have on hand! They really all taste super similar and you don’t really taste any alcohol – which can be dangerous!
HOW DO YOU CREATE THE LAYERS?
Since grenadine is a heavier syrup this is why we add it first to the bottom of the glass and then add the ice.
You slowly add in the other mixture and make sure you do not stir, this give you that sunset/layered look that is traditional for this drink.
CAN I ADD ANY OTHER ALCOHOL TO THIS DRINK?
Along with the coconut rum, you can add some pineapple rum as well to make it a little stronger.
This is optional if you are looking for a more alcohol forward drink and also brings out the pineapple flavor.
I would adjust the pineapple juice to accommodate the pineapple rum so one flavor doesn’t overpower the other.
HOW TO STORE:
We do not recommend storing this recipe, it is best served right when you make it.
You can however mix together the pineapple juice, rum and orange juice in a pitcher (if making for a larger crowd) and keep it in the refrigerator for a few hours.
TIPS AND TRICKS:
- If you do not have grenadine, you can use maraschino cherry juice in it’s place.
- We like to use Malibu for our coconut rum, but others can be used. See above for ideas.
- You can easily double or triple this recipe.
- To make sure you get the layers, add the grenadine to the bottom of a glass first and then the other mixed ingredients and do not stir.
- You can add pineapple rum to make this more alcohol forward.
- This is a great drink on a hot summer’s day, but we love it all year round.
