With your fluffy buttermilk pancake topped with vanilla greek yogurt, fresh fruit, powdered sugar and chocolate shavings.
How can you say no to that? Honestly, in my opinion you really can’t. The best part is you can use any fruit that you love!
Also switching up the flavor of your greek yogurt really gives you different flavor options to try.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
All-purpose flour
Baking powder
Fine sea salt
Granulated sugar
Buttermilk
Egg
Unsalted butter
Vanilla extract
Vanilla Greek yogurt
Assorted small-diced fruit
Powdered sugar
Chocolate shavings, optional
Chocolate sauce, optional
HOW TO MAKE PANCAKE TACOS, STEP BY STEP:
- In a large bowl whisk together the flour, baking powder, salt, and sugar, set aside.
- In a medium-sized bowl, whisk together the buttermilk, egg, butter, and vanilla until smooth.
- Add the wet ingredients to the dry and stir together until combined, do not overmix, some lumps are okay. If it seems too thick add a splash more of buttermilk. Let the batter sit for 5 minutes.
- Place a nonstick skillet over medium heat. Spray lightly with cooking spray. Pour ยผ cup of the batter onto the skillet and spread it out.
- Cook 3-4 minutes or until bubbles rise to the surface and burst, flip the pancake and cook on this side until golden brown.
- Repeat with the remaining batter.
- To serve, add ยผ cup of Greek yogurt, some fruit, and a dusting of powdered sugar. Add chocolate shavings and chocolate sauce for dipping, optional.
CAN I MAKE THESE SAVORY?
Absolutely, you can do savory and a sweet version at the same time as well. But both on their own are amazing.
Some ideas to make them savory is top with melted cheese, scrambled eggs, bacon or sausage.
WHAT OTHER FLAVORS OF YOGURT WOULD GO GOOD WITH THIS RECIPE?
This is the fun part, playing around with the flavors to see which one you like best! Some ideas that you can try include:

Honestly there are so many different flavors that it might be hard to choose. I do recommend using Greek yogurt though as it is thicker and will not run out of the Pancake Taco when serving.
If you do not want to use yogurt you can also use whipped cream instead.
WHAT FRUIT IS BEST ON THESE PANCAKE TACOS?
This is where you can really personalize and use any of your favorite fruits or a mixture.
Some that we used included: strawberries, blueberries and kiwi. You can also use, pineapple, mango, banana, blackberries, raspberries, peaches, etc.
Just switch it up and see what fruit combinations that you like together and go from there.
I DON’T HAVE BUTTERMILK CAN I USE REGULAR MILK?
Yes if you do not have buttermilk you can use regular milk for the pancakes in this recipe.
We love buttermilk as it gives a nice richness in the flavor and texture. But it is not required for the pancakes to turn out.
HOW TO STORE:
I do not recommend storing assembled Pancake Tacos but storing everything separately until you are ready to serve.
The pancakes can be stored in the refrigerator in an airtight container where they will keep for up to 4-5 days.
You can also freeze the pancakes, place in a freezer safe container and they will kep for up to 3 months.
To defrost, remove to the refrigerator until thawed. Warm up in the microwave and then assemble your Pancake Tacos.
