I love all things gnocchi. This Baked Gnocchi is one of my quick and easy meatless go-to dinner recipes.
This is a great recipe when you are short on time but want to throw something together that is filling and easy.
All the flavors work perfectly together and topped with fresh mozzarella makes this a super cheesy and creamy dish.
I love working spinach into meals when I can and with this Easy Skillet Baked Gnocchi it is super easy to put it in and get some of those good greens with your meal.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Olive oil
Garlic
Salt
Dried oregano
Diced tomatoes
Spinach
Ricotta cheese
Gnocchi
Marinara sauce
Fresh mozzarella
Fresh basil for garnish
Crushed red pepper flakes, optional
HOW TO MAKE EASY SKILLET BAKED GNOCCHI, STEP BY STEP:
- Preheat oven to 400 degrees F. Heat a large (10โ or 12โ) oven-safe skillet over medium heat. When hot, add olive oil and garlic. Cook until fragrant, about 1 minute.
- Add diced tomatoes, oregano and salt. Stir together and cook for about one minute.
- Add the spinach and ricotta to the skillet. Stir together and cook for another minute.
- Turn heat to medium-low. Stir in the gnocchi and then the marinara sauce.
- Top with sliced cheese. Turn off burner.
- Place skillet in oven and bake 23 – 26 minutes, until gnocchi is soft and cheese is bubbly and browning.
- Remove skillet from oven, garnish with basil. Sprinkle with red pepper flakes if desired.
- Serve warm.
WHAT KIND OF GNOCCHI DO I NEED?
We like the shelf-stable gnocchi that you can find down your pasta aisle at your local grocery store for this recipe.
You can also use refrigerated gnocchi too. If you want to use frozen gnocchi, make sure that you thaw it for around 30 minutes before using.
DO I NEED TO COOK MY GNOCCHI?
No, the gnocchi will cook in the water content from tomatoes and the marinara sauce.
That is one thing that I really like about this Baked Gnocchi is that you do not have to pre-cook anything ahead of time.
CAN I ADD A MEAT OR OTHER VEGETABLES TO THIS RECIPE?
Yes, if you are looking for something that is not a meatless meal you can add some cooked chicken or sausage to this.
You will want to add the meat just before adding the spinach and ricotta cheese.
You can also add in some vegetables such as mushrooms, onions or peppers if you’d like to add a little more flavor and texture.
DO I HAVE TO USE FRESH MOZZARELLA?
To get the creaminess and melty cheese we love to use sliced fresh mozzarella for this recipe.
If you cannot find fresh mozzarella then you can use shredded from the block mozzarella as it will melt better.
HOW TO STORE:
This can be stored in an airtight container in the refrigerator for up to 3 days.
I do not recommend freezing this recipe.
To reheat, place in the microwave until heated through.
TIPS AND TRICKS:
- You can swap our marinara sauce for your favorite pasta sauce.
- If you don’t have or want to use fresh mozzarella you can use shredded from the block mozzarella.
