A tried and true classic family recipe this Creamy Potato Soup is one that you won’t want to miss. Easy, delicious and feeds a crowd.
Soup this time of year is really our thing, we can’t help but make all the soups. They are comforting and easy and they feed the whole clan.
In Minnesota unfortunately we spend most of the year in cooler weather, which I’m not the happiest about but I choose to live here so I have adapted over the years.
So soup pretty much has to be on our list of makes because it is just warm and comforting and that is what we look for in a meal and this Creamy Potato Soup really does that for us.
Some of our other favorite soups that we have on our site include Chicken Gnocchi Soup, Vegetable Beef Soup and Egg Drop Soup.
We pretty much have a soup for any time of year and any occasion which I love because we can eat it all year round and it is perfectly fine!
WHY THIS RECIPE WORKS:
- With easily available ingredients this soup whips up super quick.
- We use two different meats in here to give it a nice contrast with flavor.
- Also using two different cheeses is the secret ingredients to really make it burst with flavor.
So we like to add meat to our Potato Soup Recipe. I’ve always added meat and it’s just something that we love, in this Creamy Potato Soup we add smoked sausage and bacon.
Also we love to use Veleeta and Pecorino Romano cheese as our two different secret ingredient cheeses in this soup. The combination of the two really set’s the flavor off and we love it.
Now if you can’t find Pecorino Romano you can use just plain parmesan cheese as well, it will taste pretty much the same anyway. So that is up to you.
HOW TO MAKE CREAMY POTATO SOUP, STEP BY STEP:
- Gather your ingredients and chop your vegetables.
- Cook bacon in large pan, on medium heat till fat is rendered. Remove bacon and set aside for soup and garnish. Spoon out bacon grease, leave a Tablespoon to cook vegetables.
- Add onion, carrots, jalapeno, and celery to pan and cook for 5-7 min. Stir occasionally
- Add potatoes and cook another 5 minutes.
- Place sausage in the pan and add the chicken broth. Cook 10 to 15 minutes, until potatoes are soft.Whisk flour into milk and add to the soup, mix in well. Let cook for another 5 minutes.
- Turn off stove and add velveeta and heavy cream. Stir until velveeta is melted in soup is smooth. Using an immersion blender, blend just enough to make soup thicker, but leave chunks. Add Pecorino Romano and stir well. Garnish soup with bacon pieces and Pecorino Romano or other shredded cheese.

HOW TO STORE:
This Creamy Potato Soup can be stored in the refrigerator for 4-5 days properly stored in an airtight container such as a Tupperware container or a zip top bag.
I do not recommend freezing this soup because it contains dairy. When freezing soups that contain dairy it is not the best thing to do as it does not reheat well and separates.
If you want to freeze this soup, I would recommend that you make it up until you add any dairy products and then when you want to finish the soup then you can add them.
HOW TO THICKEN POTATO SOUP:
If you don’t find that your soup is thick enough after blending with the immersion blender then you can mix together some cornstarch and water.
Once you mix together this you can add it to the soup and heat. We usually start with 1 Tbs cold water and 1 Tbs cornstarch, you can keep adding in those amounts until your desired thickness is achieved.
You can also add anything that you want to this Creamy Potato Soup, this is just our favorite recipe, you can swap the meat out for ham or omit the meat entirely.
You can add different vegetables, etc. There is no stopping when it comes to this Potato Soup Recipe, it is limitless. We have adapted it over the years and this version has become our favorite.
