Ingredients

  • 16 ounces sour cream
  • 8 ounces cream cheese softened
  • 14.75 ounce can fire-roasted corn drained
  • 10 ounce can rotel drained
  • 8 ounces shredded cheddar cheese
  • 1 ounce taco seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon smoked paprika
  • 2 Tablespoons fresh chopped cilantro

Instructions

  • In a large bowl, add the sour cream, cream cheese, corn, rotel, cheddar cheese, taco seasoning, salt, pepper, and paprika to a large bowl.
  • Using an electric hand mixer, mix well until combined.
  • If serving immediately, add the cilantro and mix to combine.
  • If you are making ahead, cover with dip plastic wrap until ready to serve.
  • When you are ready to serve, add the cilantro and mix it in well right before serving with your favorite tortilla chips or other dippers.

  1. You can use freshly shredded or bagged cheese for this recipe.

  5. Easily double this recipe to serve larger crowds.
  6. You can make this less spicy or spicier by small adjustments, see above on how to do that.
  7. Add some ground beef to give it a meaty aspect!
  8. This is great with tortilla chips, but can be served with any of your other favorite dippers as well.
