A twist on your favorite snack cake these Cosmic Brownie Cookies are fun and easy! With only 6 ingredients these are easy to whip up and are oh so tasty.
These days I’m absolutely a cookie person. I used to not be until I married my husband about 16 years ago because I grew up on crunch cookies because that was how my mom made them.
I made a vow that I would never eat or make a crunch cookie again and I’ve held true to that promise, and these Cosmic Brownie Cookies absolutely deliver.
Starting with a brownie mix these cookies are soft, chewy and filled with all the chocolate flavor. I have to say that these Cosmic Brownie Cookies are one of my favorites.
Now I’m not against semi-homemade at all, when I can start my recipes with box mixes that I regularly keep around my kitchen then I am always happy to do so.
That is what gives these cookies the signature brownie flavor. Then they are dipped in a chocolate ganache and topped with those signature candy sprinkles.
They are super indulgent and you will just want to eat one after another, it is quite hard to stop at just one. But moderation is key, but I will say that it is hard!

WHY THIS RECIPE WORKS:
- With very minimal ingredients they come together quickly.
- Using a box brownie mix, they are easy to throw together.
- You can double this recipe to keep on hand for later or make for a larger crowd or gifts.
INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM):
Brownie mix
Vegetable oil
Egg
Semi-sweet baking bar
Heavy cream
Rainbow candy chip sprinkles
HOW TO MAKE COSMIC BROWNIE COOKIES, STEP BY STEP:
- Line a sheet tray with parchment paper.
- In a large bowl mix together the brown mix, oil, and egg until combined, the mixture will be thick. Take 2 tablespoons of cookie dough and roll it into a ball, place it on the sheet tray, repeat with the remaining dough. Place the sheet tray into the fridge for 30 minutes to chill.
- Preheat the oven to 350°F. Line sheet trays with parchment paper.
- Place the chilled cookie dough 2-3 inches apart onto the sheet trays. Bake for 9-11 minutes until the tops of the cookies no longer look glossy, do not overbake.
- Let cool for 10 minutes on the sheet tray and transfer to a wire rack to cool completely.
- When the cookies are cool, make the ganache. Finely chop the baking bar and place it in a heatproof bowl, set aside.
- Place the heavy cream into a small saucepan and bring it just to a simmer. Pour the hot cream over the chocolate. Let it sit for 5 minutes. Whisk until smooth.
- Take the cookies one at a time and dip the tops into the ganache. Place it back on the wire rack ganache side up and immediately top with the rainbow candy chip sprinkles. Repeat with the remaining cookies.
WHAT KIND OF BROWNIE MIX IS BEST?
If you want that chewy flavor like the regular Cosmic Brownies then we like to go with the Fudge Brownie Mix. Now you can really go with any mix that you’d like.
This is a personal preference but to get the flavor that we wanted to achieve then you will want to go with Fudge. But use what you have on hand, they will be great either way.
CAN I MAKE THE BROWNIE COOKIES FROM SCRATCH?
Absolutely, if you have a recipe for brownie cookies that you love then you can absolutely make them that way. They may not turn out like these, but you can still use it if you’d like.
WHAT IF I CAN’T FIND THE CANDY SPRINKLES?
We usually are able to find these sprinkles at our local walmart or on amazon, if you cannot find them you can use any rainbow sprinkles that you’d like.
Again, they won’t be the exact same but they will be close! So like I said, use what you have on hand and don’t go out of your way to buy anything extra if you want to make these ASAP!
HOW TO STORE:
These can be stored in an airtight container where they will keep for up to 4-5 days in the refrigerator.
They can also be frozen, let the ganache set up and then place your cookies in a freezer container separated by parchment or wax paper. They will keep frozen for up to 3 months.
To defrost, remove to refrigerator overnight, then to the countertop to come to room temperature.
TIPS AND TRICKS:
- Fudge Brownie Mix is what we like to use for the texture, but use what you have on hand.
- These do need to chill for at least 30 minutes. do not skip this step otherwise they may spread too much.
- If you cannot find the candy chip sprinkles just use any rainbow sprinkles that you have on hand.
- These can be doubled to serve more people or to store for later.
