I love that these Chocolate Chip Oatmeal Bars can be a breakfast, snack or dessert. I love bars and these ones are at the top of my list.
The flavors go so well together and they are super easy to throw together and are great for gatherings, parties or just to have around the house.
With just a little hint of cinnamon, it really brings all the flavors together in these. Once you start at one its hard to stop.
The best thing is that these are done in just over 30 minutes! So you don’t have to wait too long to indulge!

WHY THIS RECIPE WORKS:
- You can use quick or old fashioned oats for either a softer bar or a chewier bar.
- These make a large batch, but you can easily double it.
- The cinnamon brings out all the flavors and ties them together.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
All-purpose flour
Oats (quick or old fashioned, see below for the difference)
Baking soda
Cinnamon
Baking powder
Salt
Chocolate chips (your favorite)
Salted butter
Granulated sugar
Light brown sugar
Eggs
Vanilla extract
HOW TO MAKE CHOCOLATE CHIP OATMEAL BARS, STEP BY STEP:
- Preheat the oven to 350 degrees F and line a 9×13-inch metal baking dish with parchment, leaving a slight overhang on 2 sides.
- In a mixing bowl, whisk together the flour, oats, baking soda, cinnamon, baking powder, salt, and chocolate chips.
- In the bowl of a stand mixer or in a large mixing bowl with a hand mixer, cream the butter and both sugars together for 3 minutes, scraping down the sides at least once.
- Add the eggs and vanilla and beat until well combined.
- Add the dry ingredients and mix until just combined.
- Press into the prepared baking dish as evenly as you can.
- Bake for about 20-22 minutes. Donโt over-bake or the bars will be dry instead of soft. You know they are done when the tops are a light golden brown and the center looks mostly set.
- Remove from the oven and place the whole pan on a wire cooling rack.
- Let them cool for at least 15 minutes before slicing.
WHAT OATS SHOULD I USE?
You can use quick oats or old-fashioned oats. Quick oats will result in a softer bar while old fashioned oats will result in a chewier bar.
For reference we used quick oats in this recipe.
CAN I USE A GLASS BAKING DISH?
Yes, but if you use a glass one you will want to reduce the baking temperature to 325 degrees F instead.
HOW LONG SHOULD I LET THESE COOL BEFORE CUTTING?
We like to let them cool for about 15 minutes before cutting so they do not fall apart.
If you do cut straight from the oven, they will fall apart more or less because they need a little time to set up.
CAN I DOUBLE OF HALVE THIS RECIPE?
Absolutely! You can double this recipe and make a large batch in an 11×17 rimmed baking sheet. The baking time will be slightly longer.
You can also half the recipe and bake in an 8×8 baking dish. The baking time will be slightly less.
HOW TO STORE:
These can be stored in the pan or in an airtight container at room temperature where they will keep for up to 4-5 fays.
They can also be frozen, place in a freezer bag or container and they will keep for up to 2 months.
To defrost, remove to the countertop until thawed.
TIPS AND TRICKS:
- Use your favorite chocolate chip for this, semi sweet, milk or dark.
- You can use quick cooking or old fashioned oats for this recipe. Quick is a softer bar (this is what we used) and old fashioned will result in a chewier bar.
- We like to pull out at the 20 minute mark because they will still be slightly gooey.
- Make sure you let cool at least 15 minutes before cutting.
- You can simply spray the baking dish with cooking spray instead of lining with parchment paper. Having parchment paper just helps you get the bars out easier and slice easier.
- If you use unsalted butter, increase the salt to ยพ teaspoon.
- You can double this recipe and make a large batch in an 11×17 rimmed baking sheet. The baking time will be slightly longer. You can also half the recipe and bake in an 8×8 baking dish. The baking time will be slightly less.
- You can cut these bars larger if you wish.
