Chicken is one of my go-to meats to cook with. That includes this easy and tasty Chicken Quesadilla Recipe.
One thing that my family can agree on is our love for quesadillas and chicken, so this is the perfect dinnertime meal any night of the week.
With minimal ingredients and time, you can have these Chicken Quesadillas to your table in under 30 minutes.
Serve with some of your favorite dipping sauces and sides and you have yourself a meal that you cannot resist. No more takeout!
We love a mixture of two cheeses in this recipe as well, gives it a nice flavor contrast with our homemade seasoning.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Salt
Chili powder
Pepper
Onion powder
Garlic powder
Cumin
Oil
Onion,
Cooked, chopped chicken
Monterey Jack cheese
Medium cheddar cheese
Tortillas
HOW TO MAKE THIS CHICKEN QUESADILLA RECIPE, STEP BY STEP:
- Combine all the seasonings together in a small bowl.
- In a medium to large skillet, heat oil over medium heat and add the onions. Sprinkle the seasoning over the onions and cook until the onions are soft, about 4-5 minutes. Remove from the heat and add the chicken into the skillet. Toss together and set aside.
- Combine the cheeses together and set aside.
- Brush one side of each tortilla lightly with oil, if desired. This will help the tortilla become crispier on the edges as you make the quesadillas.
- Set a large skillet over medium-low heat (or heat a griddle). While the Skillet heats, lightly brush oil on one side of each tortilla.
- Once the skillet is heated, Place a tortilla, oiled side down. Sprinkle a handful of cheese on one half of the tortilla. Followed by about ยฝ-2/3 cup of the chicken and onion mixture. Sprinkle a bit more cheese on top of the chicken mixture and fold over the tortilla. Cook for about 2-3 minutes before flipping and cooking the other side about 2-3 minutes.
- Cut into triangles if desired and serve hot.
WHAT SIZE TORTILLAS SHOULD I USE?
We use 8-inch tortillas for this recipe, we feel like they make a nice size. If you want to use smaller ones you can.
Just make sure that you are using less of the chicken and cheese on each quesadilla because you will have more.
CAN I USE ANOTHER CHEESE?
Like I said, we like to use a mixture of cheese but you can use other cheese as well.
Some other ones that you can use are, Colby Jack, Mexican Cheese Blend, Quesadilla Cheese, Pepper Jack, etc.
WHAT KIND OF CHICKEN SHOULD I USE?
We usually like to use leftover rotisserie chicken for this recipe but you can use cooked chicken breast as well.
Just make sure that you are using 4 cups cooked chopped chicken.
WHAT SHOULD I SERVE WITH THIS CHICKEN QUESADILLA RECIPE?
If you want to make it a full meal with dipping sauces, and sides there are so many things that you can use. Some of our favorites include:
- Sour Cream
- Guacamole
- Salsa
- Spanish Rice
- Tortilla Chips
- Beans and Rice
- Elote
There is so many more that I can name, but if you love it as a side or for dipping, then go for it!
HOW TO STORE:
These can be store in an airtight container in the refrigerator where they will keep for up to 3 days.
You can also freeze these, to do that place in a freezer container where they will keep for up to 3 months.
To defrost, remove to the refrigerator until thawed. To reheat, place in the microwave until heated through.
TIPS AND TRICKS:
- You can use turkey instead of chicken for this if you’d like.
- Use wheat, corn or flour tortillas, we use flour for ours.
- You can use smaller tortillas but it will make more.
- These can be frozen, see above on how to do that.
- If you do not want to make the homemade seasoning they you can use taco seasoning mix.
- Use rotisserie chicken or chicken breasts for this recipe.
- Easily double this recipe to serve more people.
- Serve with any of your favorite sides and dipping sauces, see above for some ideas.
- You can use a spatula to press down on the quesadilla as you cook to make sure everything sticks together nicely. This will make your quesadillas slightly thinner.
- You can skip oiling your tortillas if you donโt want a particularly crispy quesadilla.

Chicken Quesadilla Recipe
Ingredients
Seasoning Mix:

- 1 Tablespoon oil
- 1 large onion diced
- 4 cups cooked chicken chopped
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded medium cheddar cheese
- 8 tortillas
- Oil for brushing, if desired. (About 2 tablespoons)
