When it comes to food, chicken and rice has always been one of my favorite meals. Whether it be chicken with rice as a side, chicken and rice casserole or this easy and super flavorful Baked Chicken and Rice recipe.
Technically you could call this baked chicken and rice casserole since it’s all mixed together in one pan and that is in hindsight what a casserole is, but we just aptly call it chicken and rice.
I grew up on oven baked chicken and rice, it was one of my moms favorite meals and she made it all the time growing up. So obviously it would be something that I would carry into my family once I started one.
Now her recipe uses whole chicken breasts and she makes her own gravy but my recipe is a little bit different but we have grow to absolutely adore this recipe.
I have to tell you that the spice in this dish really make it what it is. There is nothing bland to this recipe one bit and that is what I think makes this super addicting. Not just for myself, but my kids also cant stop eating this.
WHAT INGREDIENTS DO YOU NEED?
- Chicken
- Salt & pepper
- Rosemary
- Onion powder
- Thyme
- Cream of chicken soup
- Cream of mushroom soup
- Milk
- Rice
- Butter
My stomach is just growling while I write this recipe up. Honestly if I had to choose, this chicken and rice recipe would be one in the top 5 recipes that I make from my site.
Literally that is how much we love it. We actually based this recipe off of my Baked Pork Chops & Rice recipe that we have. It is completely interchangeable and the cooking time, method and ingredients besides the meats are exactly the same.
So I love how this is super versatile between cuts of meats, meaning that you can have the same great flavor but just slightly different, especially when you have some meats that you are wanting to use up but don’t know what to do with.
Chicken is one of those meats that I like more than most and eat probably 3-4 times a week.

Chicken is just one of those versatile ingredients that you really cant go wrong with, so I’m a big chicken advocate for sure and I’m not sad one bit.
HOW DO YOU MAKE BAKED CHICKEN AND RICE?
- Preheat oven to 275.
- Dice chicken into bite sized cubes and season with salt, pepper, onion powder and rosemary.
- Add 2 tablespoons of oil to a saute pan and heat over medium and add your chicken and brown each side but don’t cook through, they will finish cooking in the oven.
- Add to a 9โณx13โณ baking dish and set aside.
- In a large sauce pan add cream of mushroom soup, cream of chicken soup and milk, rice, rosemary and thyme and whisk until combined.
- Add your butter and bring to a gentle boil until butter is melted then pour over your chicken, stir to distribute chicken and rice evenly.
- Cover with tinfoil and cook for 2 hours.
This chicken and rice bake is such a simple recipe, yes it takes a little bit of time to cook, but it is all worth it in the end, I promise!

Ingredients

Can I use chicken legs rather than breasts?

I hav never used legs in this as it calls for diced chicken breasts so I’m not sure how it would turn out using legs.

I think that would be a possibility! I would probably cook on low for maybe 3-4 hours until the rice is done and chicken is tender, I may have to give this recipe a go in the slow cooker and make a post on that!

My family loved this! I love that you can have it made and it takes two hours to cook. Gives you time to clean up and not be running around the kitchen. So easy for a weeknight meal. Plus it smells wonderful! Definitely a keeper!!!!

Do you cook the rice before adding to the mixture or do you add it in raw?

Rice is raw in this recipe, it will cook in all the liquid.

I havenโt tried but I donโt see why you wouldnโt be able to. The only thing Iโm worried about is the liquid becoming hard because of the butter but it should thin out once heated. If you do try it in the oven come back and let me know how it turned out!
