Chicken recipes are one of our go-to staples in our house. Chicken is one of my favorite meals in any way shape or form, I’ll take chicken over any meat any day.

WHY THIS RECIPE WORKS:
- Easy pantry staples are used in this recipe, no special ingredients.
- It whips up in under an hour and can be served with a variety of sides.
- This easily serves a family of 4 but can be upped easily to accommodate the amount of people you are serving.
I grew up with my mom making shake and bake chicken, but she would always add some cheese to the top and it was absolutely amazing.
So once I learned to cook, I decided that it was time that I learned to make a version of that on my own. We really liked to keep the ranch aspect in the flavor so we always add a packet of ranch to our recipe.
Seriously, this is so easy to whip up and everyone just loves it, its crunchy and creamy all at the same time.
HOW TO MAKE CHEESY CHICKEN, STEP BY STEP:
- Place chicken breasts between 2 sheets of plastic wrap and pound with a meat mallet or rolling pin until they are an even thickness.
- Sprinkle both sides with salt and pepper
- Dip each chicken breast in the flour, then the melted butter.
- Mix together breadcrumbs and ranch and dip your chicken in it making sure to coat all sides of chicken.
- Place a sprayed 9″x11″ or 9″x13 baking dish and bake for 20 minutes, then remove from the oven.
- Sprinkle with freshly shredded cheese and return to the oven for 5-10 minutes until cheese is melted and bubbly. Sprinkle with chopped parsley and serve.
WHAT KIND OF CHEESE GOES WELL WITH CHICKEN?
We are big fans of Monterey Jack cheese for when we top our chicken breasts. But also cheddar, Swiss or mozzarella work really. well as well.
It’s really a personal choice, since this is made with some ranch dressing in it, Monterey Jack is one of the best ones that I feel pairs well with this Baked Cheesy Chicken!
I just think chicken and cheese were made to go together, whether it be stuffed inside like a Cordon Bleu or topped like Chicken Parmesan.
HOW TO KNOW WHEN CHICKEN IS DONE:
The safest internal temperature for chicken is 165 degrees F. This is in any baking or cooking method. Usually the juices turn from pink to clear.
The best way to tell if your chicken is done is using an instant read thermometer, this is what we use for any and all of our meats that are baked or grilled.
They are usually an inexpensive kitchen tool and very well worth the investment (although like I said it is minimal). You can get some for $10 or even some over $100.
HOW LONG DOES IT TAKE TO BAKE A CHICKEN BREAST?
Depending on your temperature that you bake it at which is usually in the range of 350-375 degrees F along with the weight of your breast 4-6 oz.
Your chicken should cook from 15-20 minutes for 4 oz breasts and about 25-30 minutes for 6 oz breast. But again like referencing above, always go with the internal temperature reading.
This Cheesy Baked Chicken has the best of both worlds, it’s breaded so it has a little crunch to it, then it is slathered in cheese which will give it a creamy aspect.
This recipe is the absolute perfect dinnertime recipe that your family will enjoy many times again. It is one of the most requested chicken recipes in our house.
TIPS AND TRICKS:
- If you don’t own a meat mallet to mash these out, a good old rolling pin will work just fine.
- You can use already trimmed chicken breasts if you’d like, they will come in smaller portions and weight, so adjust baking time accordingly.
- This recipe can easily be doubled or one and a halved to serve a larger family.
- We regularly switch out our cheese types from Monterey Jack, Swiss, Mozzarella and even Cheddar.
- Make sure that the internal temperature of your chicken is at least 165 degrees F before consuming.

Baked Cheesy Chicken
Ingredients
- 4 6 oz boneless skinless chicken breasts
- Salt & pepper
- 1/2 cup flour
- 1/2 cup butter melted
- 1 cup Panko breadcrumbs
- 1 package ranch dressing
- 2 cups freshly shredded Monterey Jack cheese
- 2 Tbs chopped parsley
Instructions
- Pre-heat oven to 375 degrees and spray a 9x11 baking dish with non-stick cooking spray, set aside.
- Place chicken breasts between 2 sheets of plastic wrap and pound with a meat mallet or rolling

- Mix together your ranch dressing and breadcrumbs.
- Add each of your flour, butter and breadcrumbs to their own shallow dishes.
- Dip each chicken breast in the flour, then the melted butter and then the breadcrumbs
- Place in the baking dish and bake for 20 minutes, then remove from the oven and add the cheese.
- Return to the oven for 5-10 minutes until cheese is melted and bubbly.
- Sprinkle with chopped parsley and serve.
