- Heat a frying pan up to medium heat. Spray with cooking spray and crack an egg into the pan. Sprinkle a pinch of salt and pepper over the egg.

- Cook for an additional 1-2 minutes.
- Remove the egg onto the bottom half of the bagel. Top with avocado slices and arugula followed by the top of the bagel.
- Repeat the process for the second bagel.
CAN I USE ANOTHER KIND OF BAGEL?
If you are not a fan of everything bagels you can absolutely use another flavor of bagel. Some options include:
- Plain
- Rye
- Sesame
- Onion
- Egg
- Jalapeno
- Salt
- Cheese
- Multigrain
The list can go on and and on, I would just not use any fruit or sweet flavored bagels for this recipe.
WHAT OTHER CHEESE GOES WELL WITH THIS?
This is really a personal preference, we love cheddar as it is classic. But you can also use American, Pepper Jack, Colby Jack, Gouda, Provolone, etc.
Use a cheese that you love and think would compliment the flavors well.
DO I HAVE TO USE THE SAUCE?
Personally I really love having the sauce on this Bagel Breakfast Sandwich, but not everyone loves sauce.
You can choose to butter your bagel instead or just leave it plain and add the toppings.
WHAT OTHER TOPPINGS/MEATS CAN I USE?
Like I mentioned before you can really switch this up to how you like it, not everyone has the same preference.
Some other ideas that you can use to swap out ingredients or add include:
- Sausage
- Ham
- Tomato
- Romaine Lettuce
- Spinach
- Other cheeses
HOW TO STORE:
We do not recommend storing this recipe and only eating it once it is first made.
Eggs do not reheat well, also the bagel will become soggy especially with the sauce on it and the avocado would not last.
