When it comes to mornings, there is no better way to wake up then with this loaded Breakfast Burrito Recipe.
I love a good breakfast, I used to really not be a real breakfast person, but the older I’ve gotten the more I really appreciate it.
Now I’m not particular when it comes to savory or sweet, but I cannot pass up a good Breakfast Burrito Recipe.
These are loaded with eggs, cheese, peppers, tater tots, sausage and bacon. Really they are full of all the good things and more.
When it comes to these Breakfast Burritos, I am really looking for that delicious flavor that comes from different places.
With a little kick from picante sauce, you get a nice balance of savory and spicy that really creates just an overall flavor explosion.
If you have been on the hunt for a good breakfast meal, then you absolutely have to make this Breakfast Burrito Recipe.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Tater tots
Cheddar cheese
Butter
Sausage patties
Bacon
Roma tomatoes
Onion
Green bell pepper
Eggs
Milk
Salt
Pepper
Burrito size flour tortillas
Picante sauce
HOW TO MAKE A BREAKFAST BURRITO RECIPE, STEP BY STEP:
- Bake the tater tots according to package directions.
- While the tater tots are baking, shred the cheese into a bowl, set aside.
- Meanwhile, heat a large frying pan or skillet over medium heat.
- Add the butter to the pan and melt. Add sausage patties and brown for 3 minutes per side. Remove from the pan and set aside.
- Then add the bacon to the pan and cook until your desired crispness. Remove from the pan and set aside on a paper towel lined plate. Remove all but 1-2 tablespoons of bacon drippings from the pan.
- Next, add the tomato, onion, and diced bell pepper to the pan. Sautรฉ for 3 minutes.
- Add eggs, milk, salt, and pepper to a mixing bowl and whisk. Pour into the pan and scramble the eggs.
- Once eggs are mostly cooked, add shredded cheese. Stir and cook for 3 more minutes.
- Heat the oven to 400 degrees F.
- Heat the tortillas in the microwave for 30 seconds to soften.
- Slice the sausage patties in half.
- Drizzle picante sauce down the center of each tortilla.
- Add 2 of the sausage patty halves. Lay a strip of bacon over the patties,
- Then top with tater tots.
- Lastly top with 2-3 large spoonfuls of the scrambled egg mixture leaving 1-inch of space at each of the sides of the tortilla.
- Fold the ends of the tortilla over the center. Fold one side of the tortilla over the center. Roll tightly to the other side.
- Place into the oven and bake for 7 minutes.
- Serve with more picante sauce if desired and enjoy!
DO I HAVE TO USE BURRITO SIZED TORTILLAS?
While we say go big or go home, you can use regular sized tortillas for this recipe, they will be smaller and make more.
So depending on your family, you can absolutely do this. Also they freeze well for later if you want to make more.
CAN I ADD MORE CHEESE?
Absolutely! While we like to mix the cheese with the eggs in this Breakfast Burrito Recipe, you can also add more.
I would sprinkle some more shredded cheese on top of the egg mixture before you wrap your burrito.
Then bake, and you will have more delicious melty cheese in each bite.
IS THIS SPICY?
While the picante sauce does give it some heat, you can pick the type you want from mild to extra hot.
If you do not want to use the picante sauce you can leave it out. Or you can substitute it for some mild salsa.
CAN I USE ANOTHER TYPE OF POTATOES?
If you do not want to use tater tots for this recipe, you can use cooked shredded hashbrowns, diced hashbrowns or even home fries.
The tater tots are just something we have always used and it worked and gave it a nice crunchy texture.
HOW TO STORE:
These can be stored in an airtight container or bag where they will keep in the refrigerator for 3-4 days.
They can also be frozen, wrap burritos in foil and place in a freezer container or bag and they will keep for up to 3 months.
To defrost, remove from the freezer into the refrigerator until thawed. To reheat, place in the microwave until heated through or back in the oven at 400 degrees F until heated through.
TIPS AND TRICKS:
- You can make your own homemade breakfast sausage if you’d like.
- Use ground breakfast sausage if you find it easier.
- Use other cheese flavors, we just make sure to use block cheese and shred it as it melts better.
- Add or omit any of the peppers, onions, tomatoes etc.
- Adjust your spice level by choosing a mild or extra hot picante sauce, or omit it.
- You can make these smaller using regular sized tortillas.
- Other potatoes can be used, see above on some options.
- These can be frozen, see above on how to do that.
- Add more cheese to the top of the eggs if you want a really cheesy breakfast burrito.
