Bagel Breakfast Sandwich

Ingredients

Sauce:

  • 2 Tablespoons mayonnaise
  • 2 Tablespoons mustard
  • 2 Tablespoons honey

Bagels:

  • 2 everything bagels sliced in half and lightly toasted
  • 4 slices of bacon cooked fresh and crispy
  • 2 large eggs
  • Salt and pepper
  • 2 slices cheddar cheese
  • ½ avocado sliced
  • ¼ cup arugula

Instructions

  • In a small mixing bowl whisk together the mayo, mustard, and honey.
  • Spread the sauce evenly onto both sides of the toasted bagels.
  • Heat a frying pan up to medium heat. Spray with cooking spray and crack an egg into the pan. Sprinkle a pinch of salt and pepper over the egg.
  • Cook for about 2 minutes, flip over and lay the slice of cheese on top of the egg and the cooked bacon on top of the cheese.
  • Cook for an additional 1-2 minutes.
  • Remove the egg onto the bottom half of the bagel. Top with avocado slices and arugula followed by the top of the bagel.
  • Repeat the process for the second bagel.

  6. You can cook 2 eggs and make bagels at the same time, if desired. 
  7. Make sure to have your bagels prepped and toppings ready so you can assemble and eat while your egg is hot and cheese melty. 
  8. If you don’t want the honey mustard sauce you can simply butter your toasted bagel.
