Breakfast is one of the most important meals of the day, and when we don’t have a ton of time I like to make a batch of these Bacon & Cheese Egg Bites to have around.
The ingredients are super simple and minimal and they take no time at all to bake up. You can also double this recipe with no problem.
Breakfast is one thing that my kids absolutely adore and when things get busy around here it is amazing to have these Egg Bites around just in case.
The best part is that you can really doctor these up to what you’d like, we keep them simple and easy for the most part, but branch out from time to time.
When it comes to an easy morning, or on the go breakfast, you have to make these Bacon & Cheese Egg Bites.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Eggs
Whole milk
Cheddar cheese
Bacon
Salt
Pepper
HOW TO MAKE BACON & CHEESE EGG BITES, STEP BY STEP:
- Preheat oven to 350 degrees F.
- Grease a 12-cup muffin tin with non-stick cooking spray.
- Add eggs and milk to a mixing bowl and whisk until combined.
- Add bacon and shredded cheese evenly to muffin tin cups.
- Pour egg mixture evenly over bacon and cheese, filling each muffin cup just over ยพ of the way full.
- Bake in preheated oven for 18-20 minutes or until eggs are set and starting to get golden brown on top.
- Allow to cool slightly, gently remove from muffin tin, then serve warm.
WHAT OTHER INGREDIENTS CAN I ADD TO THESE EGG BITES?
While we keep it simple in this recipe, you can absolutely add other ingredients to make them heartier. Some ideas include:
- Onions
- Mushrooms
- Peppers
- Sausage
- Spinach
- Other Seasonings
Whatever you feel like would be a good addition to these, try it out and see what you think!
WHY DID MY EGG BITES SHRINK?
This is a normal process of how eggs will bake in the oven, they will expand at first and then they will shrink down when they are removed.
Do not be alarmed, you did nothing wrong. This is just the science behind it!
WHAT OTHER CHEESE CAN I USE?
This is where it can be fun and tasty is when you play around with your cheese flavors.
Some other flavors that work well are pepper jack, monterey jack, gruyere, gouda, mozzarella etc.
Use what you like or what you have on hand and come up with your favorite combination.
WHAT IS THE BEST WAY TO REMOVE THESE FROM THE PAN?
Make sure that you really spray the pan well with the non-stick cooking spray, this will ensure that that they can come out.
We like to run a butter knife around the edges of the egg bites to remove them, using a fork or a spoon to gently lift underneath.
If you really are worried about them sticking, go with a silicone muffin pan.
HOW TO STORE:
These can be stored in an airtight container in the refrigerator where they will keep for up to 4-5 days.
They can also be frozen, place in a freezer container and they will keep for up to 2 months.
To defrost, remove from to the refrigerator overnight or until thawed. To reheat, place in the microwave until heated through.
TIPS AND TRICKS:

- Switch up your cheeses to any of your favorites, I have some ideas above.
