Well we have officially made it halfway through the week. It’s one of those weeks where I’m so lost on my day’s that I don’t know if I’m coming or going anymore. Seems like I have a lot of nothing to do, but yet end up not finding the time to do half of that nothing. The weekend just needs to hurry up and get here so I can sleep in and do a whole lot of nothing. Which rarely happens, I tell myself that but I never follow through with it.
I tell myself that I’m going to sleep in, do I? Nope, up at 6:30!! FREAKING 6:30 on a Saturday, who does that! Apparently it’s my body’s way of acclimatizing myself to motherhood….except that I’ve been a mother for 11 years now and it hasn’t been until I had my daughter 2 years ago that my body didn’t want to sleep in anymore. I even come equipped with a built-in alarm clock, aren’t I just a lucky one. No real alarms needed for this gal, my body does a lovely job every morning waking me up right in time to get the kids up and off to school. Anyone else suffer have that wonderful gift?
ANYWAYS, the reason for my little rant about pretty much nothing but well…nothing was with that oh so lovely time I seem to have but yet not have I was able to create this bad boy. Drunken Monkey Butter. You heard that right! You hear monkey you obviously think of banana right? Well you’re in luck, this ooey gooey concoction is full of banana as well is spiked with a little bit of the good old rum! Think of Bananas Foster for your toast, crackers, sandwiches.
Ever wonder what to do with those left over bananas other than make the same old banana bread time and time again? Look no further, I got you covered. The most difficult party of this stuff is the sitting around and waiting you have to do for it to thicken and that is literally it! I could just sit and smell this for days. I’m a bananaholic so I may be partial but seriously….you need this in your life!

You can always use Rum extract…

I doubled the amount of bananas (only) in this recipe and added a quarter teaspoon of nutmeg. Omg it’s amazing. I’ve made it several times in the last month and shared with friends… Everyone loves this jam so much. I call it bananas foster jam. Thank you for the awesome recipe!
Amy
I left out the water completely by the way. Came out perfect.

Hi there Alli
I am wanting to make this as I have been given a huge box of ripe bananas. Do you know if this will keep in sterilised jars without having to refrigerate, until it is opened? I assume the rum will give it some sort of preservative quality.
Tornadough Alli
Unfortunately I’m not a huge canner, so I can’t in good faith say how it will hold up.

Ugh I ALWAYS have brown bananas – I put them in the freezer to save them for later, I feel so bad throwing them away – can I use those in this recipe? AKA define ripe ๐ Thanks for sharing this Alli, found this recipe at Saucy Saturday lady!

Technically all bananas will be good, the over ripe will be sweeter. I used spotted but not completely brown bananas.

I’ve never heard of such a thing! My little monkey would probably love this on his toast (assuming I leave out the rum, that is…haha!). Pinning this.

Hi Alli, This sounds so good! How many jars does it make and have you tried canning it? Thanks, Janet
Tornadough Alli
Hi Janet, this makes 1 8 oz had with maybe a little extra which I put in bowl. I haven’t canned this but I don’t see why it wouldn’t keep if you do. Just refrigerate after opening.
