Well we have officially made it halfway through the week. It’s one of those weeks where I’m so lost on my day’s that I don’t know if I’m coming or going anymore. Seems like I have a lot of nothing to do, but yet end up not finding the time to do half of that nothing. The weekend just needs to hurry up and get here so I can sleep in and do a whole lot of nothing. Which rarely happens, I tell myself that but I never follow through with it.
I tell myself that I’m going to sleep in, do I? Nope, up at 6:30!! FREAKING 6:30 on a Saturday, who does that! Apparently it’s my body’s way of acclimatizing myself to motherhood….except that I’ve been a mother for 11 years now and it hasn’t been until I had my daughter 2 years ago that my body didn’t want to sleep in anymore. I even come equipped with a built-in alarm clock, aren’t I just a lucky one. No real alarms needed for this gal, my body does a lovely job every morning waking me up right in time to get the kids up and off to school. Anyone else
suffer have that wonderful gift?
ANYWAYS, the reason for my little rant about pretty much nothing but well…nothing was with that oh so lovely time I seem to have but yet not have I was able to create this bad boy. Drunken Monkey Butter. You heard that right! You hear monkey you obviously think of banana right? Well you’re in luck, this ooey gooey concoction is full of banana as well is spiked with a little bit of the good old rum! Think of Bananas Foster for your toast, crackers, sandwiches.
Ever wonder what to do with those left over bananas other than make the same old banana bread time and time again? Look no further, I got you covered. The most difficult party of this stuff is the sitting around and waiting you have to do for it to thicken and that is literally it! I could just sit and smell this for days. I’m a bananaholic so I may be partial but seriously….you need this in your life!
Drunken Monkey Jam
- 3-4 large ripe bananas
- Juice of 1 lime
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 3/4 cup water
- 1 tsp vanilla
- 1 tsp cinnamon
- 2 Tbs rum
- In bowl chop up your bananas and drizzle with lime juice, set aside.
- In sauce pan over medium-high heat disolve your sugars in water and bring to a small boil.
- Add your bananas, vanilla, cinnamon and rum.
- Reduce heat and simmer for about 30 minutes, mashing bananas as they get softer.
- Mixture should thicken up quite a bit where it is no longer runny.
- Once thickened pour into jar and refrigerate.
- Mix will thicken longer as it cools.
